Baldurs Gate 2.
I've been playing it since 2002. Once you've completed it, you can go through it again and again with different classes, different party members, different alignments and plenty of mods.
It's a different style of game, it's RTwP (real time with pause) rather than turn based, uses a different game engine and has a fixed isometric view.
It also uses a different set of [rules](https://old.reddit.com/r/baldursgate/comments/fiensn/a_brief_list_of_changes_from_add_to_5th_edition/), the one that springs to mind is that in the 5th Edition, the higher your Armour Class the better, but earlier on it worked in reverse.
I don´t know about never getting old, but some of favourites in no particular order:
SWTOR (MMO, but the classes main stories are basically singleplayer, and really really fun)
Mass Effect (finished around 12 times i think)
Mass Effect 2 (6 times iirc)
Mass Effect 3 (2 times)
Dragon age: Origins ( 2 times)
Borderlands 1 - 3
Nioh 2
Pokemon games (esp with challenge runs)
Monster Sanctuary (The game has a randomizer built in at ng+ if you want)
Personally i play games for "only" about 100 hours before getting bored of them, but these are some of the ones that i return to pretty usually for a playthough.
HoMM3 is so easy to jump back into even just for 1 day only. The art, sfx, and music are so soothing you could spend eternity there. I feel the same way about Age of Wonders 2
there's multiple paths to endings aswell as a harder difficulty in the ng+. you will find most games only have one character and one build and are quite repayable despite that aswell. sekiro isnt just the exception it really excels at replayability since getting better at the parry system and upgrading your prosthetics is so addicting
ARPGs most definitely. PoE in the first rank, time sink like no other, but also Grim Dawn and Last Epoch (full launch is actually today, I think?) will also give you a good run for your money
Arma 3 which is like Roblox for single dads and divorcees

Civilization, heroes of might and magic 3 Slay the spire

Why though? I love the game but there's one character and one build. And once you get a boss, it's not too challenging to repeat it...

Anything with a strong modding community. Minecraft, Bethesda RPGs, The Sims
XCom2 - War of the Chosen. So many runs through this game and I could always go for another.
