Once we go into actual combat when he'll break lose we can see the jankyness of the gunplay. But since enemy's AI are mostly dumb it's not a big problem
In 76, suppressed 10mm Pistol + pipe revolver rifle are damn satisfying when sneaking around
If you care mostly about gunplay and want to pay hommage to fps heritage, go and play the Quake 1-2 remasters.Â
While they may feel "restrictive" because there is no slide, wall run, vaulting mechanics. They both nail (NIN) the direct gunplay.
Play on Hard at a minimum.
Black is a bit of a hurdle to get running, but the game was designed with the philosophy of "how to make shooting fun in an empty room", so it definitely fits.
You listed Doom but haven't played them, go do that now. Other notables are Borderlands games (again listed but not played) and I would say Serious Sam is a good one. Chronicles of Riddick is also very solid.
Bulletstorm, FEAR, Robocop:Rouge City, Rage+Rage 2 (especially rage 2), Bioshock 1+2 (infinites gunplays good but it suffers from a more generic arsenal)
I double on Rage2. Holy satisfaction of a game. Definetely try this out, OP, the combos are crazy, you feel like a killing machine. You can check some crazy montages on youtube to get familiar with madness too.Â

It's a rhythm FPS game. Just the typical singleplayer FPS game set in a hell environment with different evil enemy archetypes, but played alongside a sick metal soundtrack which gets harder as you do your shots to the rhythm of the music climaxing in the full experience at maximum combo chain.
It's also not just some random artists, but huge names from the metal music world like Trivium, Dream Theater, Arch Enemy and bands alike.
There's (I think 3) DLCs that add more music - one even with pop-music, if the whole metal isn't your thing, but I highly recommend the base game soundtrack!

I am gonna say Call of Duty has some pretty satisfying ones. But recently The Finals (not single player) has some really satisfying gunplay and is super addictive.
Not quite single player but coop, although you can play it solo, but helldivers 2. Very fun weapons with a lot of variety, from regular, to something more resembling a Warhammer boltgun, or lasers, or what are basically handheld mini artillery pieces.Â

By the way, you can play Mw3 Zombies alone, it is even (omg) FUN.

Rage 2 has a very satisfying gunplay, the rest of the game is just decent.
Vouch for Rage 2 except I genuinely enjoyed the whole game. By the end of it you feel like a literal gunslinging god

Try giving Gunfire Reborn a run or two. It ticks all the boxes laid out here on paper, at least.

Starfield’s gunplay sadly is not an upgrade of Fallout 4. It feels almost exactly the same with less weapon variety/mods. Also not VATS.
Not OP but not VATS no problem for me tho. Because ADS is way more fun and immersive
