Its gotta be Tony Hawks Pro Skater, considering he just went on tour last year with the bands from that game playing the games soundtrack around the country 20+ years later.
People can have their own personal favorite but as far as overall popularity, its THPS by a landslide
THPS 1&2 Remake I feel is up there with THUG and the rest, not just for combining two soundtracks but discovering new bands as a result.
Something I feel ill never experience again and glad THPS 1&2 gave that to me one more time. I won't want to spoil it in case anyone wants to chase that dopamine rush lol
Undertale is the best for me right now. Character motifs. A main melody that is arranged in different ways throughout the game. Not afraid to be silly. Manages to make the same battle song sound different somehow.
I'm a sucker for character themes though. I'm actually disappointed when a game or movie doesn't do it.
SSX 3 or any game with the Radio Big Soundtracks like Burnout Paradise. I think also many of the FIFA games have absolute banger soundtracks, although not original tracks they are curated playlists that I feel really embody a fluid vibrant game

Opinions and all that, but I will put the Persona series alongside any of the other greats out there. IMO, no game had a better-fitting soundtrack to it's visual presentation than Persona 5 Royal.
Zelda botw immersive adaptive soundtrack with how it changes and varies even with player items making sounds affecting it to some degree. Whole video on it on youtube goes into great depth.

My god. Reminds of the on day I had .y playlist on shuffle and it played aeriths theme. Then dragonsong then a different more acoustic version of aeriths theme all in a row. It hit me in the feels. So sad.
Ori and the Blind Forest / Will of the Wisps. Gorgeous orchestral music, matches the game perfectly - had the full soundtrack in rotation since the game released and still not bored of it.

I have to agree that soundtracks are really important. I believe they're often underappreciated. People tend to focus more on graphics, but a good soundtrack can be the icing on the cake for a beautiful environment.
