T Joes has gluten free pie crust, stuffing, etc. This will be my first GF thanksgiving, and with their products and 1:1 baking flour, I'm optimistic that no one will feel like they're compromising with the GF menu. .

For anyone that doesn’t have a TJ, Hyvee has/had a ton of gf things - stuffing, fried onions, cream of (x) soups. Walmart has a selection too but not as much. My Kroger also has gf fried onions.

I already had Canadian thanksgiving, and it was entirely gluten-free. It's worth it for the peace of mind. We used to do half not gluten-free, and it was a mine field keeping track of which gravy was safe, where the kids' hands were, and if the stuffing was held over the plates. Going full GF takes away that part of the anxiety. This year, I made a baked brie with walnuts, cranberries, and maple syrup on top. It was a hit.

We've made stuffing with two types of gf breads. Use a stronger hardy gf bread and another one with rice base that tends to break down. Add in gf turkey. Dessert is usually pumpkin pie and lemon meringue pie made with gf pie crusts.

Rice stuffing is a staple in our house for thanksgiving. Oddly, only those of us who have Celiac now ever liked bread stuffing anyway. And we didn’t realize it. The last time we made a gluten stuffing after my mom, my sister, and I stopped being able to eat it, literally nobody touched it. So we had to make do with the sub-par gluten free bread stuffing and throw away the good stuff, and that was the last time we made anything with gluten for the holidays. We took the same flavors we loved in our bread stuffing and started making it with brown and wild rice instead, and now everyone loves it. Tell people they can bring drinks. Wine, sparkling cider, whatever they want to drink, they can bring it. Put your foot down on the food and say thanks but no thanks. If you have specific store bought items they can pick up, like Brie cheese or maybe lettuce or something, that’s fine but tell them to leave the cooking to you. We love having our 100% GF holidays. Even those of us who could eat gluten find it less stressful because nobody has to think about accidentally making someone sick.

I’ve found using just white rice flour works better. The xanthan gum included in most gf flours tends to make it bind weird ime.

Honestly all that stuff sounds bomb and I can’t understand how any “regular” person would think “where’s the gluten? I can’t eat these things because it DOESNT have gluten!” I bet if you didn’t even tell anyone, they wouldn’t even know. You’ll have GF breads and desserts, if someone thinks they taste a little odd (I mean, even we can tell a gluten free item from a non one) then just let them chalk it up to a bread or dessert that wasn’t the most amazing one they’ve ever had. We’ve all had some sort of treat that just wasn’t doing it for us, especially at a family gathering haha! I say, if you’re really gonna host the whole fam, let them know you got everything and if they really want to bring something, like they won’t shut up about it, tell them to bring the wine! Not drinking? Martinelle’s it is! Also, can I come? That menu sounds tasty as hell.

My brother was always a nightmare about gluten free stuff. If my mom and I could eat it he'd know it wasn't gluten free and would insist it tastes bad. He was getting better, until I broke him with a gluten free Oreo tiramisu 😇 first thing he ever complimented. He now eats gluten free desserts and food no problem

I’ll second a trip to Trader Joe’s! The stuffing and corn bread are worth it (stock up now for the whole year)! AND the gf crusts are less expensive there than other stores. I make sausage and stuffing balls and no one misses the gluten. If cornbread isn’t your thing, try the Brazilian cheese breads in the freezer section for rolls. Small but delicious! Our popular GF desserts include my husband’s Rice Krispie treats (Aldi cereal, not the Kellogg one), and his Never Fail Fudge (recipe on container of marshmallow Fluff). I make a deconstructed Twix treat by baking chocolate chip cookie dough in lined mini cupcake pans then inserting an unwrapped rolo right out of the oven. My son was newly diagnosed at age 6 and called them Happy Fridays so that name stuck. Last but not least is a fruit/oatmeal bar, but TJs oats may not be safe now so that’s a tough one. Family members who are wary of GF are happy with all of the above. Also missing my father this year, as he passed just before TG last year and this was a huge holiday for him. I’m sorry for your losses and HUGS to all missing loved ones at the holidays.

I’m bad at this, I Google it every time I make it, (the generic one with bread crumbs, cream of mushroom soup, velveeta, etc). I kind of make a creamy cheddar cheesy sauce that I substitute for the velveeta, make homemade cream of mushroom, and gluten free bread crumbs. My dad is one of those “I don’t eat gluten free or vegan things” so I say nothing and he knows nothing, and we are all safe eating at my table. I think green bean casserole lacks the cheese. I used to do mine with homemade cream of mushroom, and some supermarkets have the French fried onions now that are gluten free which is such a huge win because I love those things. Now that you reminded me, I think I’ll be throwing that on my Thanksgiving menu, too.

We will have a turkey, mashed potatoes, live g free stuffing (I always bake it after so it tastes better), Mac n cheese, glazed carrots, the red lobster gf biscuits. For dessert just a chocolate pie crust with pudding and cool whip. Everything gluten free expect I will get my husband some rolls he likes but never gets. It’s just us again this year. I make GF Italian sausage stuffing: 1 loaf of pre-made GF bread (butter each slice, cut into cubes and spread on a rimmed sheet pan then sprinkle the lot with garlic powder, onion powder and some seasoned salt) then bake 250-300 F for about an hour stirring every 15-20 minutes until toasted. I’ll do this step a few days before then let the cubes sit in a giant bowl & “stale” a bit longer. Then the day before Thanksgiving (or day of… depending on what time you eat) Peel/shred a 1 lb. bag of carrots, mince an equal amount of celery and onion, and finely chop one bunch of flat leaf Italian parsley. Those ingredients all get sautéed then dumped into the giant bowl on top of the seasoned bread cubes. Then take 1 lb. of sweet Italian sausage without casings (or just slice the casing open and discard) then sauté the sausage until just cooked & dump that into the bowl too. Add some ground pepper and a light sprinkle of salt as some sausages are a tad salty. Fold it all together. You can taste it now but it’s not finished. Usually at this point a bunch of people come running into the kitchen for the obligatory “pre-Thanksgiving bowl of stuffing.” At this point it’s going to be very hot. You can let it cool until about room temperature, put it into a container and stash it in the fridge until the next day (if prepping Thanksgiving the day prior). Or if you’re eating Thanksgiving the same day, you also have to wait for it to cool some as you need to add some scrambled up raw eggs before baking. Take 4-6 raw eggs and scramble them together, then pour the raw egg over the stuffing mixture and fold it all together. Place it into a large/shallow baking dish and bake 350 about 45 minutes to an hour. The eggs help add extra moisture and also to hold the stuffing together into clumps once baked. Then serve. It’s really simple and one of those recipes that I grew up with (just not gluten free) but once I was diagnosed celiac, I just added the step of making the stuffing cubes myself. It’s easy to double too. Just make a second loaf of GF bread cubes ahead of time, and double the rest of the ingredients. I tend to make extra then I’ll freeze half (without the raw egg added) for another day… just add the egg after thawing and bake. You can also substitute in hot Italian sausage.

I make all my pies with a walnut or pecan crust. It's a little bit more expensive because it requires at least 2 cups of nuts. Walmart has some nut crusts as well. I just prefer to make my own.

We invite random singles from my husband's work and they don't even know I'm celiac and never mentioned a thing. The bread is the trick' I use **Against the Grain baguettes.** and serve it with my own Bernaise Butter. I toast my own croutons to make stuffing with Emeril Lagasse's stuffing seasoning recipe.

I accidentally made really good turkey gravy after cooking some of the Costco seasoned gf turkey patties and then deglazing the pan with some chicken broth and roasted chicken better than bullion. I tossed in some rice cakes and the rice starch thickened it up to the perfect consistency. 💜

I’m gonna say this gently. Don’t make the holiday about you. Let people bring their comfort foods and just don’t touch them. We lost my dad this year and all I’m worried about is how we’re gonna get through this first big holiday. I’ll eat what I can and love on my family, be grateful for them, and move on. My mom and I are both GF but would never ask our entire family to make that sacrifice because it’s not their problem to cater to. I just wanna hang out with them, not make them feel weird. I’m not being snarky, I’m truly sad about this year and I want you to enjoy your family too instead of go in defensive like that. It’s not about the food. It’s about the people. Edit to add: banana pudding with gf wafers is definitely on the menu this year.

I’m going to reply gently, too. I’m so sorry you lost your dad. I lost mine 2 years ago, and today would have been his 87th birthday. I miss him every day, but the happy memories outweigh the sad ones more and more often. I hope the same for you. That said, nobody is bringing gluten into my home. I will pick and choose, eat ahead of time, eat after, whatever, if someone else is hosting. I want to feel safe at home. Wishing you a lifetime of sweet memories.

I already bought Trader Joe’s stuffing yesterday because I’ve learned that if I wait even until mid-November, it will be gone. This year we’re having Thanksgiving with my family and my brother’s. Of the twelve of us, my daughter and I are GF, my younger son is lactose intolerant, my daughter-in-law is vegetarian, and my brother and nephew are diabetic.
