If you live where they sell canyon bakehouse then you are all set. I like them better than schar or anything else I've tried. 2 tips: any gluten free bread really benefits from toasting. And while white bread is probably what you're used to and versatile, I find that whole grain GF breads hold together better and are less crumby.

hell yes to french toast. really any gf bread that you like will work, but i second the commenters who mentioned the hawaiian sweet bread. the king arthur pancake mix mentioned is awesome, but the krusteaz one is killer.

I second the fact that any gluten free bread works. Gluten free bread sucks because it’s dry and dense. Soak it in some egg or cream or whatever recipe you use and slather it in butter and syrup. The only way you’ll be able to tell the difference is the tiny little pieces of bread.

I haven't tried french toast in a long time, but King Arthur GF pancake mix is every bit as good as the real thing. If you get a waffle iron, even the lesser pancake mixes come out good as waffles. I also like the Trader Joe Ube Mochi pancake mix and come Fall, the pumpkin pancake mix. Both also good as waffles.

In central Indiana, Native Bread makes an absolutely outstanding GF cinnamon raisin bread that makes an equally outstanding French toast. My experience with GF French toast is that you really need to let is soak in your egg mixture and cook it a little cooler and longer.

I use any gluten free bread and have had no issues! As for pancakes [this](https://www.mamaknowsglutenfree.com/easy-gluten-free-pancakes/) is my favorite recipe. My son requests them pretty often and tbh I just mix all ingredients together and make them, they’re always awesome. Not all gluten free flours are made equally, I have noticed that the Walmart brand and bobs all purpose both make it too thick and then I have to add water and they’re not as great. For my personal taste it works the best with target brand gf flour and it already has xanthan gum. Small disclaimer I have only tried it with the 3 I mentioned so there are likely better options.

Of course. The great thing about French toast is that it's historical KY made to use stale bread. So any bread works, but most shitty gf breads work really well because they are already most of the way to stale as soon as you buy them. I would avoid Canyon Bakehouse breads as they tend to be more moist at room temp than others.

I use Little Northern Bakehouse raisin bread. It already has the cinnamon in it and I just dip it in egg and fry up. Top it with maple syrup and thinly sliced strawberries.

I use gluten free bread for my French toast casserole/bread pudding and even normies who hate bread pudding love it because it's not sad and soggy like the glutenous version. Might have something to do with the bourbon praline sauce too, but Canyon or Rudi's are my favorite

You absolutely can! Honestly any decent white gf bread should work - the egg mix will help add moisture. Little northern bake house is one brand you could look for. And i buy my local grocery store’s house brand gf pancake mix, but in general, I find there’s zero difference between gf and regular pancake mix! My gluten-eating boyfriend actually prefers GF pancakes

My fave bread for French toast is Schar Artisan Baker white bread. For pancakes my favorite mix is King Arthur but I’ve found that using almond milk instead of regular milk and oil instead of butter makes a better textured pancake—or waffle.

My husband makes me some amazing french toast! He just uses whatever GF bread we have on hand (usually GF bread from Trader Joe's) and does it. Love this man he is a keeper. He made us Ube waffles this morning. (mix from Trader Joe's is awesome)

I'm in Australia so don't think I can help with actual brand recommendations, but I think my gluten free bread actually makes better french toast than when I was eating gluten. The texture is just better for me. As for pancakes, I HIGHLY recommend the Mamma Knows Gluten Free fluffy pancake recipe. It comes out amazing every time. Absolutely love it!

Aldi has a GF baking mix that makes great pancakes. If you'd rather not cook them yourself, Trader Joe's has frozen gluten free pancakes and they don't turn into bricks when you heat them like all the waffles do.

Yes. We use whatever bread we have around. Canyon Bakehouse and Udis are both frequently used. I find it take less milk in the eggs than gluten bread. Experiment with soaking time. I tend to cook is low and slow.

I had gluten free pancakes at ihop yesterday. Not so bad. I'm not celiac though I have MCAS which makes me sensitive to gluten. Not sure about the cross contamination on a place like ihop since it doesn't noticeably affect me.

Of course you can! That’s one of the “tests” I run on any gf bread I haven’t tried before. In my experience use mostly egg and less milk (or no milk) as gf bread will fall apart if made soggy because of the lack of structural gluten. Regrettably I have not found a good gf bread for French toast (I like a soggy French toast- gf bread doesn’t do this well) Canyon bake house brand gf breads is my all around favorite with Trader Joe’s gf bread being a close second. I also tried and really really liked “Franz gf mountain white” but found they don’t sell it in the northeast USA where I am currently. I’d love to give franz gf bread the French toast test but ate all the bread as PBJ travel sandwiches when I was in Wyoming.

I make gluten-free brioche using this recipe: https://www.letthemeatgfcake.com/soft-and-buttery-gluten-free-brioche/ You really should make it using her gluten-free bread flour blend, other blends just don’t give you the same results. I slice it thickly, and let it sit out overnight. And then I soak it in this mixture to get a custardy-centre French toast (cooked slow in a decent amount of butter). 3 eggs 1/2 cup Belsoy 1/2 cup oat milk 1 tbsp white sugar 2 tsp vanilla 1 tsp cinnamon Pinch of salt I use a mix of Belsoy and oat milk in this recipe because my partner is gluten-free and dairy-free because of a casein allergy. You could sub out both for 1 cup of half-n-half.

If you don't have access to a high quality gf bread, I recommend poking it with holes on both sides (via fork) while you soak it in the egg mixture. The egg expands so you don't see the holes after it's been cooked and creates a more thoroughly saturated, traditionally soft french toast (minimum 10 mins soaking time).
