Considering during covid, my car would take 45 quid to fill and now takes 65 quid to fill, no... every penny makes a difference. Say my car takes 50 litres to fill...

I do that twice a month. that's an extra £12 a month just cause. So thats another £144 a year to fill the exact same car with the exact same fuel for the exact same amount of time, for no other reason than they fancy charging more.
It used to be roughly £1080 a year to fill my car up. It's now £1560 (all based on average monthly consumption).
So no, every penny really makes a big difference in the long scheme of things.
At 6p per liter that's £3 per 50L fill up. Two fills per month would be £6, for a total of £72 per year difference. Not 12/£144, you doubled twice.
The reason though is purchasing power, and greed, and there could be some other factors.
Bigger chains sell more fuel, and get it at better prices, so that's purchasing power. Some locations are "off the beaten path" and they pay a little more in logistics and have to make that up at the pump. Some places have more inside foot traffic and sell more goods, so need less profit on fuel sales. Some places don't and need the increased profits from fuel sales to stay open.
And then some places just want to make more money.
Unfortunately, there's not usually a good way to know which thing(s) contribute(s) to any single station's prices.
So i did, i didnt even realise id done that. Good spot. The point still stands though, just a few pennies makes a massive difference over the year.

And I get the greed thing, but be honest, if you were a Middle-Eastern land owner and there was oil under your land.. knowing it's a finite resource, wouldn't you try to make as much profit as you reasonably could for it?
And everyone down the line needs to make money, too. Logistics, refining, logistics again, fuel company, fuel station.. it adds up.
I know the price of fuel sucks, but they're not charging more than the market can bear. Unlike housing, which is ridiculous based *purely* and *solely* on greed. My parents bought a house in 1986 for $48,500. In 2013 when they lost it due to some bad refinancing decisions, it was worth $250k, when it finally sold in 2017, it went for 435k. It's 1100 sqft on half an acre, it's not a big house. 4 bed, 2 bath. Today it's probably worth $500k or more.
And that right there is the point, it can only 'bear it' because they so decide through that chain. It is unreasonably priced, other countries have pretty much the same fuel at half the price and have to jump just as many hoops to get it.

The average middle-class American family (the only frame of reference I have) can no longer afford to purchase a home. At least not without living an hour away from their job. And then sometimes not even then. They used to say rent should be no more than ⅓ of your income, but in some places you'd need 3 full time jobs to make that. The housing market, at least in the US, is a stone's throw from pricing everyone out. The market cannot continue to bear these prices.
Fuel got up to $8 a gallon (roughly £2.12 per liter) in some of the pricier parts of the US in the early 2000's, and people figured it out. So we know the fuel market will bear these prices. They're not so high people are increasingly taking public transit, or being forced to work from home, or causing a large uptick in the sale of EVs.
Fuel prices are high, and it sucks, but technically they could be even higher and still be "bearable." At least from a market standpoint.
