In plant taxonomy, the Latin specific epithet "officinale" (or "officinalis") typically means "of or belonging to an officina." An "officina" was a storeroom in a monastery where medicines and other essentials were stored and prepared.
Dandelion was used as a diuretic and digestive aid among other things. Please note that our understanding of medical science has progressed significantly and you shouldn't use dandelion in place of medications.
They will eat a lot of different veggies just fine, even regular iceburge lettuce. I just can't get them to eat the dandelions. Grasshoppers are their favorite though and there are plenty of them available.

I’ve been make dandelion salads my whole life. Tastes just like arugula. My kids even love them now (with extra pecorino of course).
