I just want to mention my hack that allows me to skip syrup altogether. I make a high protein pancake with eggs, cottage cheese and (the hack) a scoop of flavored protein powder. Then I can top them with just butter. My favorite powder for this so far is Quest Cinnamon Crunch. You might try incorporating the protein powder into your recipe.
I don't have a weighed and measured recipe. I usually use 3 eggs, a dash of salt, a glop or 2 of cottage cheese and a scoop of the protein powder. I use my immersion blender so there are no cottage cheese lumps. If it is too thick to pour well, I add some water or cream. They are delicate, so don't make them bigger than your spatula. And make sure they are pretty well done before flipping.
Maple Grove Farms sugar-free butter flavor is my absolute fave, but they don’t sell it near me. The Wholesome Yum syrup is pretty good (just expensive).
I recently found some sugar Rx maple for $2 (clearance) at Publix. Pretty good but NOTHING is going to be Blackburn’s. You’ve made me miss my dad. Dad made pancakes on Sunday morning with Blackburn’s. Good stuff.
Another vote for sugar RX Sugar Maple Syrup.
That stuff is the bomb.
It kind of hits me for both my maple syrup and just general brown sugar in coffee type of needs.
Ahhhh and it’s Rx Sugar. I’d never tried it until I found it on the clearance rack. I tried it in parking lot, and went back in and bought more. I also got the plain syrup. Good stuff!
Steeve's Maples. It's also refreshingly affordable for a no sugar product about 3$ Canadian and I've found it at various supermarkets. It is sucralose sweetened so if you're sensitive to that maybe not the best but I enjoy it when I need a lil "sugary" maple hit that isn't also super watery like most fake sugar products

I love people whose recipes include words like glop. I cook like this, and always stress when asked for a recipe. I can follow yours perfectly.

Wholesome Yum Keto Maple Syrup is really good with no bad aftertaste. I get it from Amazon, but it's expensive AF.
I use DaVinci Gourmet Sugar-Free (banana and pineapple) for my greek yogurt. You don't need to add much, and it's delicious.
Smuckers sugar free syrup is my fav! It tastes the most like real syrup to me. I got it on Amazon
