Both the Keychron V6 and V6 Max should have integrated memory. And both don't need installed software in order to use them but of course you need to use software to configure them. Speaking for the V6 (non-Pro) you can use VIA to remap the keys, layers and make some simple macros.

I discovered in while it was in beta by accident and promptly updated my firmware with it. They've since sent an email out about it to those on their mailing lists.

I run a custom 6-layer setup on mine, but I don't mind things that are hard and complicated. This website will make it easier for people who aren't programmers to flash the firmware.

All keychron boards now come with QMK (their fork) unless otherwise specified.  You don't need any software for it.
