I live in eastern Suffolk, so I've eaten at these restaurants:
The View - Oakdale (best overall, good food, somewhat poshy, get the corner table on the water)
Oakland's - Hampton Bays (poshy Hamptons restaurant, large dining decks, end of Dune road, pricey)
The Oar House - Patchogue (large waterfront dining, docks, good food, live music at times)
Lombardi's On the Bay - Patchogue (catering establishment, nice unobstructive views)
Sundays on the Bay - Hampton Bays (good bar vibe, some waterfront dining, docks, next to Oakland's)
Whaler's - Bayshore (more like a diner on the water, docks)
Fatfish - Bayshore (food's good, views good, nice place)
Harbor Crab - Patchogue (boat docks, food is average, bar gets busy)
Lakehouse - Bayshore (losing ground these days, still Ok for a place to eat on the water)
Drift 82 - Patchogue (laid back, waterfront tables more like a bar vibe, south most of Patchogue)
I find myself mostly at The View, Oar House or Oaklands. Call ahead to guarantee a table on the water. It's not always guaranteed or a long wait.

Sorry not south shore but I went to Prime in Huntington last night for my anniversary. Timed my outdoor reservation perfectly for sunset and it was gorgeous. Pricey but (mostly) worth it.
I also like Lakehouse, Buoy Bar, and Bayhouse.
The vibes are very much a scene of thirst trap photo taking Instagram wannabe influencers with tacky outfits and tackier fillers. Nino's is a joke. Yes, let's spend $38 on "lobster" pasta and loud music so we can watch some of the other patrons give each other lap dances. While you're at it, go to Dirty Taco and enjoy your overpriced tacos with shitty store bought tortillas and sweet n sour mix margs served in a plastic cup with decor that brings Ed Hardy and Juicy Couture.
They don't sell pizza by the slice...
I choose my experience a little further down at Butler's Flat where I'm not overpaying for mediocre food and a scene.
Old school clam bar ambience: Jeremys. Food quality is good if you like raw and fried seafood. The opposite of fancy but good view of the canal and boats coming thru it

North shore I'd do walls wharf in Bayville. You can sit at a table on the sand. Yes it's the bay but it's beautiful on a good night
Not South Shore unfortunately, but definitely try Prime in Huntington. The view is amazing and the food and cocktails are superb. Also fantastic is Harbor Mist in Cold Spring Harbor. It is small and intimate with very affordable prices.
While not on the ocean, the Buoy Bar or the Point Lookout Clam Bar in Point Lookout are on one of the channels off Jones Bay and get great sunsets. Food is great as well.
And if you wanna get off the island, head to ‘The Water Club’ on 34 street along the FDR Drive in Manhattan. Or, head to Jersey on the waterfront with a view of Manhattan with ‘Molos’ or ‘Fleming’s.’ Just bring the big credit card lol
As you know, the South Shore of Long Island is kind of long but if you are looking for the western edge and are okay with a more beach casual, than formal, atmosphere, try Five Ocean. It's right on the beach at the end of the Long Beach Boardwalk. You can walk the boardwalk or the shoreline after dinner and take in the sunset.
