Your body is mostly water and there is nothing you can do about it. You're right, "water weight" is a very nonspecific term for minor fluctuations that have nothing to do with fat... it's just noise.
Avoiding salt and/or deliberately dehydrating yourself to try to eek out an extra couple pounds does not help at all with your goal of losing fat.
But does being dehydrated interfere with the mechanism of weight loss? I assume so because water is needed for the chemical process of breaking down fat.
But what if someone drunk a lot of water, but ate a diet of boiled meat and vege with 0 salt? Would they be dehydrated because the body can’t retain half the water it should without salt?
I’m asking because I am that idiot and keep yo-yoing between 2kg of water weight depending on if I gather the courage to add salt to my food or… 0.
And I think it’s causing my weight loss to be waaaay slower than it should be considering my diet (not temporary) and calories.
Minor changes in water have nothing to do with fat loss. Weight fluctuating +/- a few Kg is 100% normal. In a typical day you probably consume 3-5kg of food and drink. It doesn't mean anything.
If your weight has not been trending down over a month or longer it's because you aren't eating at a deficit.

If you drop your hydration so low that your body can't access fat for energy, you have bigger issues to worry about, like dying in the next 15 minutes.
I try to keep my sodium intake low, but for me it's mainly because of high blood pressure and erosive esophagitis- it makes things worse for me. I have noticed though it helps keep water retention a bit less, so on the scale it doesn't fluctuate *as* much as times where my sodium intake is high, and I feel less bloated- which kind of motivates me to keep going? Idk if that makes any sense.
I'm not sure whether it interferes with *actual* fat loss or not, though🤔

Yeah, some people freak out over the chaos in the number on the scale, till they get more experience, or they never get experienced enough.:)
