I really like Neo Bowser city. I know some people either love it or hate it but personally, I think its has such a cool design aesthetically and the music is awesome.
It’s obscenely fun when you’re not play at the tumor of a speed level that is 200cc. Many courses, especially NBC, are not built for that speed, but at 150cc the turns are just perfection.
Bone-Dry Dunes for me. Legit my second favorite 8 nitro with only Wild Woods beating it.

i don't think mktour is a well coded or optimised game, if you look at mktour circuits most geometry is flat colored(and when there's textures most of the time it's not very high quality and it's pretty flat). that + they tried making the game go 60fps(and it does mostly to be fair.)

It looks wonderful on 3DS, on switch is garbage. I love N64 Toad’s Turnpike (the original). It’s super hard especially in Mirror mode, that makes it a huge challenge.

I love Baby Park because even though it's the simplest course, it's also the most hectic course because of its simplicity (assuming you're playing online), making it difficult to play on.
I know people don't necessarily hate it, but Dry Dry Ruins. Probably has one of my favorite soundtracks in the entire series, and it's pretty fun to race on too.
Daisy Circuit. I like it because it's unique compared to the other circuit tracks. Most of the circuit tracks take place during a sunny day. Daisy Circuit takes place during a sunset. Nintendo changing the time of day the track takes place on really made it stand out to me.
I also like it because I am massively biased towards Mario Kart Wii.

Toad Circuit, Sky-High Sundae and Tokyo Blur have gotten ludicrous levels of hate thrown their way. You could argue that the graphics might be slightly lacking or the anti-gravity makes it too hard or the layout isn't interesting, but I don't think that justifies giving them such unflattering criticism.
A lot of people myself included really didn't like the Ninja Hideaway DLC map and we all thought it was a very difficult track and did not have a good time. Fast forward to 2 weeks ago, me and a friend of mine did a 2 way personal tier list of the MK8 tracks including switch dlc. We judged the tracks on their own merit without items or 12 racers getting in the way. When visited this track, we rated it S tier (S tier was the highest rating we gave). While not the highest among the tier, it honestly deserves the placement. It's that good of a track.

Desert Hills from MK DS because I like desert tracks and I just like the theme and the background. Also the shortcuts are great and the ending is good for doing drifts.
Not in 8 Deluxe, but SNES Mario Circuit 4. People tend to dismiss it as “copy-paste-flip” of MC3, but with the right touch-up, it could be quite enjoyable. Something something upward slope halfway, then 180 and jump, uneven ground and then final jump before finish.
I like n64 sherbert land. it didn't bore me as a kid on the wii and I love destroying the staff ghost with magicrueser. also the penguin in the center is just as helpless as marty the thwomp but gets no spotlight. #avengethesherbertlandpenguin

It generates procedurally in anything except time trials. Similarly, outside time trials, Moonview shuffles some of the boost pads

Neo Bowser City is peak for me because it rewards skill so well, and really seems to work well with the game's mechanics.
3DS Neo Bowser City People only hate on it because they don’t know how to brake-drift.
I also really like 3DS Toad Circuit. I like the simplicity, and the visuals of the MK8 BCP version aren't an issue for me.
