If the title was "the Americas", then Greenland and Canada are fine to include. Iceland is part of Europe, both geographically and politically, and shouldn't be included under either banner.

Well if you really want to get pedantic (and it seems like you do!) Iceland is straddling both the North American and European plates so it is both American and European, not just European.
