I personally really love his David Michod-directed movies, Animal Kingdom and The Rover.
I think he was more of a name in the 90s thanks to Count of Monte Cristo and L.A. Confidential. I don't know that younger folks would know who he is by name, but cinephiles may know him from Memento.
My wife worked on A Slipping Down Life, so I always think of that one first, but Memento and Count of MC are probably my favorites of his that I go to pretty quickly in my head.

I recently watched Alien Covenant on Netflix. The first scene has Guy Pearce reprising his role in Prometheus. When he appeared, my wife asked "Is this the invisible man"? I spent some time staring with a blank expression trying to remember which version of The Invisible Man was Guy Pearce in. Then I realised she was mistakening him for Kevin Bacon and was referring to his role in Hollow Man.
The question is "most famous/recognizable" but those are two different things. I'd guess that the role he's most famous for is Memento but more people would recognize him from Iron Man 3, just due to viewership.
That said, the first thing I think of is Mare of Easttown. Recency bias, I guess.
