What are you wanting to do? In the summer places like the zoo and desert botanical gardens open early. Some brunch spots like Snooze open at 6, most coffee shops open early
A couple things:
Summer in Phoenix means that "early birds" get up at 4a to beat the heat and enjoy the very, very early sunrise!!
* Piestewa Peak is great in the morning. 60-90 minute walk up.
* Walk the canals. AZ Canal at Goldwater BLVD is good.
* Scottsdale Greenbelt for a walk (bring a coffee)
Take a hike up Shadow Mountain or Lookout Mountain. Shouldn't take too long depending how far away you are (both in northeast Phoenix) Shadow Mountain is near Cave Creek & Greenway Pkwy - Lookout Mountain is off Cave Creek but closer to Bell Rd.
Either should give a nice morning view, depending where all the smog is and which way the wind is blowing!
Both cost zero dollars.
when is she visiting? May is vastly different from August
Waking at 6am is different from being somewhere at 6am

Whatever you do BRING WATER
Grab breakfast and go mini golfing. You might be able to arrange a hot air balloon ride. Depending on when she's visiting, you could float down the Salt River.
Estate sales are in Sun City which is on the West side of Phoenix on Thursdays Fridays and Saturdays early like about 7 AM and you can hit up some good deals at that time it's wonderful walk and it looks like Edward scissorhands neighborhood.

Morning hikes are great. Try South Mountain.

I consider calling piestewa a “walk” up a bit misleading. It’s maybe mot the most difficult but it’s definitely a hike
You can go drink and play pinball at Yucca Tap Room/Electric Bat Arcade, opens at 6am.

Get coffee downtown and walk around. It’s nice in the mornings.
