“Lock is lit, and so am I” is also a callout in Medieval Madness, which I think came before CC. Another one from the same character in MM that also got me laughing is “come on in, and we’ll take this outside.”
There's also Homer saying the SIMPSONS letters as you collect them, but very infrequently you'll get a "Si señor!" as you collect SI, it always makes me laugh
Failed to hit anything on Flight of Icarus the other day and I get "Flight of Brickarus" ... laughed at that one. Also... "Hallowed be thy Drain". That machine has a lot of personality.
It’s savage, but amazing… On Venom if you score less than 500k on a single ball, it will taunt you with the callout, “That was bad! Why are you so bad?!”
My wife and I attended MGC this year and got to play The Princess Bride. She was looping the center/right ramp and after about the fifth shot one of the scoops in the middle popped up in front of that shot and Vizzini said, "That's enough of that!" It was spectacular and a really unique use of the P3 platform. I don't think I could say it's my favorite callout, but it was definitely a really memorable, fantastic pinball moment.
Again, not sure if it's my favorite, but anytime a game tells me a lock is lit I immediately hear in my head, "and so am I" from Cactus Canyon.
I'm pretty sure any Elvira callout on any of her three tables is the winner here. But I always sing "Extra, extra, read all about it, extra ball!" on Tommy and even though I don't drink "Lock is lit, and so am I" on Cactus Canyon.

Black Knight Sword of Rage - literally every call out is pure gold, but if I had to choose two, one would be "Run home to momma", the other would be the knight making the baby goo goo noises.

Not exactly a deep cut but first that comes to mind is James in Metallica saying, “we’re gonna fry that mothafucka” in a twisted voice. I grin everytime. And Sparks’s voice is simply perfect.
I can't help but crack up hearing the Black Knight taunting me as I drain during an intense game. Play better, making a baby voice as I get irrationally angry. There are numerous callouts and they usually catch me off guard
