I like to have one fries per cheese curd (about the same mass for both). This is too much, I don’t like having cheese left by itself at the end of eating the poutine.
Balance is key. It’s okay to have some cheese leftover, in fact curds can out weigh fries and I’d be happy. However what OP posted is just a bowl of curds.
