Guitar Hero II Deluxe (which I worked on) added a ton of quality-of-life features from later GH games and rhythm games in general (stuff like focus mode and a note streak counter with an FC indicator), ported all the 360 on-disc stuff back to the PS2 plus a handful of RB and GH1 songs, improved the graphics somewhat, added bass quickplay, let you play speedups right in-engine--lots. 2.0 is definitely the pinnacle of what all we did with it.

For Battlefront games, you have to learn how to mod the PC version using the free mod tools officially released by Pandemic Studios. This is not *hard* but very time consuming. After you learn PC then it is just a matter of learning console limitations to make a port. Everyone who mods BF games on a console version started off with years of PC experience.
Notably i heard there's a misterix mod. You know, the one that adds all the creepy stuff.
I also saw a GTA 5 legacy edition mod. Interesting stuff, even if it's just San Andreas with a GTA 5 skin.
Many PS2 games have had fan translations because they never gotten an official release in their language. There's even plenty of games that swaps the audio to another language because some people prefer to listen to the original audio instead.
You have the OG zodiac edition for final fantasy XII patched to english, which is pretty good. As it was only released in Japan.

Naruto Ultimate Ninja 5 has been patched to NTSC. There's another Naruto PS2 game that adds two characters back to the American release due to movie reasons (?).
They are making a big modification for the shadow of the colossus, with new colossi and, probably, new territories, and even new weather! but it's still in development, as far as I know

There’s some really fun sonic riders mods but I think they use the GameCube version as a basis instead of the ps2 version
