Also, if you get the chance, head up to Lake Alta on the Remarkables (drive up to the ski field, then hike to the lake... easy hike)... When they leave the mines of ministereth after Gandalf's fall, that scene's from Alta (some of the scenery is pieced in from other views), but you can jump across the stream that Aragorn jumps over when they leave.
Head down to the AJ Hacket Bungy bridge for the Pillars of the Kings.
If you're super keen, head up the Shotover Canyon for the Black Riders "If you want him, come claim him" ... and also up the Arrow River as the scene is pieced together from both rivers.
