You can find a gold nugget on any horse. It doesn't have to be just bounty hunters.

Ive done it a few times when im being chased on horseback and didnt have enough deadeye to reliably hit riders. ...its the horses fault for chasing me anyway.

Sometimes i shoot the horses on purpose when being chased since it feels 10x more badass than just shooting the guy in the head

I just massacred van horn the other day I killed the horse somebody was riding on the and injured the other one I revived the one that was injured I felt bad even though it's just a game

This is from my first play through of the game I completed the story in high honour and completing the 100% made John Marston's honor the lowest it can be so I just followed him.

It seems rare. I got a bounty hunters' leg pinned under the body of his horse one time and he died like this. I kept trying to do it again, but it never happened.

Only time I ever skinned a horse in that game was when someone else shot my horse. Never could bring myself to actually shoot a horse in the game.
