That’s actually another hallmark of shrinkflation. Air added to ice cream is called overrun. Normally some is good because it can give it a better texture, but it can also be abused to sell less product. You’re essentially just buying ice cream foam.
Air acts as a natural insulator, so ice cream with high overrun melts slower or remains foamy once thawed — it refuses to melt because of the excess air in it.
