3 huge things for me. 1. Invest in a wireless (Bluetooth or WiFi temp probes. 2. If you’re on a stick burner like me prepare everything 1-2 days prior such as cutting splits or buying them. I use my own since I have and abundance of cherry wood. Find your size and length. 3. This is just basic smoking knowledge to me now but before it wasn’t, keep your smoker at the same temp or close all the way through the smoke, wrap at 150-160 and don’t pull until your probes have a average temp of 201-204. That would be my biggest 3.
Bigger pieces of wood burn longer, allowing for you to spend less time tending to the fire (theoretically). But how big of splits do you wanna get? Maybe make your own? Gotta axe it haha. Don’t forget to have fun :)
There is no downside to lurking on this sub. It's been pure pleasure smoking for the first time (because of this sub) and enjoying everything with the family. I also would like to show this sub my appreciation and hope more people start smoking.
You are right, I can easily spend more than that on other groceries. But I haven't made a brisket worthy of eating an entire week worth of. I simply haven't had the change to cook enough briskets to actually get good at it. Plus as much as I love leftovers, my wife can't stand ever eating any leftovers whatsoever. So, it will make ONE meal for her, and the rest of the week she will want other things. AKA, $80 meal. Plus sides and whatever else you have.

I'm still a noob but low and slow is for real. If YouTube says 4 hours give yourself 6. You can keep it warm easier than finishing faster.

I don’t buy it technically. We raise beef so I will have 4-5 done by the butcher shop a year. But yea they’re $85-125 in my area.
