The three base game regions can be easily completed with the trucks found within them. When I started Alaska and Taymyr, I stored all of my previous trucks except for one scout and rebuilt my fleet, basically. I'll cop to relying on my most OP trucks for some of the harder DLC regions, but switching trucks often and trying to rely on what the maps give you is so much more fun than deploying the Mastodon in Michigan and never looking back, IMO.
Minimum amount of trucks is 1, as there are trucks that technically can do everything: 114SD, GMC MH9500, Paystar 5070, P512F, Western Star 49X. Although I wouldn't recommend any of them as they're either limited to UOD tires(114SD, GMC, 49X) or have short range(GMC, Paystar, P512F)
To answer your question by intent: you are in second easiest region in the game with trucks "bad" enough to match the difficulty. Could you beat Amur with, say, 49X crawling in Low gear and/or winching half the time? Probably, but you wouldn't want to.
Minimum trucks? I think you could get away with 6, maybe 8.
Don't forget we'll need trucks that can deal with Kola and Amur, so pick at least some that can take chains.
First, a scout, one of the better ones, cos some of the towers are a challenge to get to, and we'll need them for races/timed missions.
Then, an all purpose cargo veheicle, like an Azov 6, that can take high saddle, low saddle, crane, and, if we can wrangle it, long log carrier front. I've had a trailer mod pack for so long I can't remember if there's a long log trailer or semitrailer, or if the special trailer and front is the only way.
This is where the maybe trucks comes in, if there isn't a truck that can do both saddles and log carrier. Also make sure one of them can take a metal detector, I think the recovering army trucks in Kola requires one to actually find them.
Thirdly, all 3 mission specific veheicles, the small forklift truck and the cat 755 or whatever its name is, which have contracts that require you to use them in Yukon, and of course a tractor for potatoes in glades. Might be others here I've forgotten.
Fourth, an oil carrier and general recovery, able to take a big crane too, must also be able to take a seismic addon, like the Derry special.
I think that covers all the missions, so long as I havn't forgotten some. However, variety is the spice of life, and I can guarantee with only one or two trucks, those big contracts in Yukon and Wisconsin are gonna get very dull.
Yeah, removing the 3 mission specific trucks leaves you with 5 at most, and you might be able to drop even more, like the scout and one of the all purpose trucks, but I chose to overestimate.
I personally used all those trucks and still do occasionally. My absolute favourite unit has to be the azov 73210. It goes anywhere and everywhere. Have even used it for climbing over rockslides.
Use them all and enjoy, you will find your go too eventually and probably have a fleet of them lined up for use in every situation.

i guess you can do all base game content with just one truck, and all dlc content with 4 trucks, a scout for scout trailer missions, cat 770 for that one contract, a tractor for farming and another truck that can use at least both saddles, short and long log addons and the seismic module.
in a previous thread i concluded that i could do the whole game with the azov 7, winch the cat 770 and tow scouts in a bed when needed. the tractor is still needed strictly for farming.

Now think again: Would you want to drive five trucks only for 1,000+ hours, when every season gives you two-three new trucks?
Technically it's possible to complete the game with just a single truck - if it can mount the seismic vibrator, has high and low saddles, can mount a crane, a log crane, and can have all three log addons. Any scout trailers can be winched to the destination, so you don't need a scout.

I'm in Taymyr, I have 41 vehicles, 310 hours of play! I would use them all if I could; but that's it, it's not really possible. Give it a chance today, give it a chance tomorrow, one at a time! The important thing is that you can do your job with them.
