I make something similar a lot. I'd recommend fresh coriander and using ghee.

I’m guessing, like me, that OP is from the UK. We only use the word coriander, which can mean the seeds or the fresh herb. We don’t use the word cilantro over here

THANK YOU for the recipe! Garam Masala is one of my favorite spices. I appreciate all the wings and vinegary pepper sauce posts for sure, but nice to see some South Asian heat for a change!

Ah. You mean Gareth. I understood why you called me Dwight, I just didn't know who Dwight was (I'm from the UK, where we have the proper, original version of The Office). In any event, I didn't mean to 'correct' the OP or sound like a know-it-all knob. My comment was written in haste. I've met people who understood garam masala to be a single spice, so I wouldn't make the assumption that OP would have 'certainly known'. Was just trying to be informative.

I’m with ya!!! Super excited to try this. My boyfriend got me eating spicy, and I introduced him to Indian food... this is perfect for us. I love a challenge, and this sounds amazing.

I'm fortunate enough to live in Toronto, which has Hakka restaurants *everywhere*. Chili Chicken is like cocaine in chicken form -- it's the SE Asian variety of Nashville Hot, but with "Chinese food" style chicken chunks instead of southern fried whole chicken pieces.

Yueh Tung downtown on Elizabeth St (Dundas/Bay), or Federick Restaurant (not a misspelling) on Ellesmere -- they have a special "extra spicy stuff" part of the menu for people like us.

Not sure if we are talking about the same thing, but Chili Chicken is an extremely popular Indian dish. Specifically, an [Indian-Chinese or Indo-Chinese dish](https://youtu.be/SPSYPsalyVQ), which is an entirely separate genre of Indian cuisine. You will probably find an Indo-Chinese restaurant in a big city in America or Canada too, or you will likely find an Indian restaurant that has Chili Chicken in its menu.

I do a lazy version of this where I basically throw all the ingredients into a slow cooker for like 4-6 hours until the chicken falls apart. So delicious and easy.

I made a recipe with all these ingredients on Sunday. Except I added lentils and cauliflower, and I ran out of onions ;( Used ghost peppers. Did enjoy.

update: it appears that there are 2 versions of this book. red hot chili pepper (from lorenz in 2001) and the chili lovers cookbook (from southwater in 2005/anness in 2011). since the description on the cover of both versions refer to "over 140 recipes," i think that these are more or less the same book. my guess is that the title, "red hot chili pepper," was copyrighted/trademarked by the band, so they had to change the name to "the chili lovers cookbook." i ordered the two versions to see if the scorching chili chicken recipe is listed in both of them. i will check back in when i have them.

This is a pretty mainstream Indian dish and would be surprised if your local Indian restaurant doesn't serve it as an appetizer. There are a couple of variants of this which are "Andhra Chili chicken" and "Chicken 65". I've seen veggie variants of these made with Gobi (cauliflower).

i have since purchased and gifted like ~10 copies thus far. this is the best hot pepper cookbook that i have had to date. thanks for the recommendation, it gets used 3-4 times weekly. it is worth it just for those recipes for the rubs in the introduction.

It really is a quality cookbook instead of just typical gimmick hot sauce books. I haven’t found a better spicy cookbook since. Spread the word!
