There are no bacteria inside a steak. If the knife used to cut the steak was not clean there can be minimal on the outside. Most steaks you can safely eat _,raw_

It's not rare. It's raw, not cooked. Uncooked raw beef is soft, but no where near as tender as cooked meat. You eat it raw only if you prefer the raw taste

Its pretty close to blue rare is what they are getting at, which is essential just seared outside and still raw inside. This looks like between blue and rare to me. When you are cooking steaks for a group you cook to each persons preference. Doesnt matter if they like it well done, thats what they want. I find medium seems to please the majority. Most who like it more cooked will still enjoy medium as long as they arent the "gray means cooked" type, and the more rarer people will still accept medium since it still clearly has color and is juicy

Iā€™ve worked in steakhouse for 6 years. Between blue rare and rare isnt raw. Itā€™s between blue rare and rare. Not being rude but Iā€™ve cooked more steaks this week for people than youā€™ve probably eaten ever. They said itā€™s ā€œraw, not cookedā€ which isnā€™t true.

Coyboytroy32, Some of these fine and well meaning hungry, steak loving people suffer from erroneous food preparation & cooking information being consistently passed around as God's Sacred Truth about Steaks. They'll quote novice YouTube "Chefs" and use common misunderstandings and guesswork opinions as backup. As long as they're not cooking for ME, they can like and attempt any one of 873 methods to produce a cooked steak that will please THEM. They'll always consider Blue Rare and Rare as dangerous / forbotten / verboten and a "Steak Sin" akin to Well Done! Thank you for pursuing and learning your professional craft, somehow timing it all and getting everyone's different order out correctly. One day I'd like to watch that magic in action, but I'm happy to enjoy the delicious results!
