I dunno who's out there smoking turkey breasts and cutting it 1/4" thick near me, and then putting it between deli rolls from the local bakery and wrapping them in saran wrap and distributing them to every small town gas station in a 20 mile radius of me, but they're doing god's work.

It’s pretty much what Bucees was 20 years ago, size wise. I stop at The Texan in Schulenberg almost weekly. I hate dealing with Bucees, IMO it’s all super hyped marketing for an overpriced gas station. None of the Bucees across the country do anything to support the community other than jobs, like county fair purchases or sponsorship of events. The owner of Bucees is a stooge for Governor Abbot.
My favorite 🤩 that The Texan has is fresh brewed teas in like 5-6 flavors, then all the flavors are available in sweet or unsweetened.

There actually is one in CA that sells awesome meat that I’m guessing is locally sourced. It’s out in Doyle, CA.
If I remember correctly it’s a shell station out front, and they are located right on hwy 395 in Doyle. They sell great meat, and I didn’t ask or check, but my assumption was it’s most likely from one of the ranchers that are nearby along hwy 395.
I still remember the banner over the entrance, never bought any though.

I tried to make jerky out of the dollar tree ribeyes.
They shriveled up to nothing in like 6 hours. It was impressive how much saline solution was infused in those things.

Is marbling an American thing? Since I joined this sub I've been fucking searching for a marbled steak and have not even seen one. I live in Portugal. I've had good Argentinian steaks which is the favourite here, bit there is no marbling.
I saw a documentary on steak one time that said many traditional European breeds of cows don’t develop as much marbling which is why stewed beef is more popular than steak in that region. Can’t speak to Argentina though.
You’re not wrong. From my experience traveling a few European countries, their cuts are definitely less marbled unless you’re getting Japanese or Australian wagyu
I'm Australian and marbling is common here depending on the cut. We aren't Argentina or Japan of course but I think our beef is fairly well thought of? Or I've been horribly lied to by my high school ag science teacher.
I’m from the netherlands and I can’t marbling that comes close to this. It’s probably a combination of cows here being mostly grass-fed while american cows get corn, and european breeds (at least in the netherlands) are just relatively shit.
Our breed of cow is designed to produce more intramuscular fat. If you looked at some of our choice grade it would probably look closer to what you are familiar with.
SA and EU cows just have different genetics not likely to produce much intramuscular fat.

Most of the Kwik trip Gas stations I've been to up North have steaks and some of them look to be pretty good quality. Also their glazer donuts are damn near as good as Krispy kremes

Texas really has amazing beef. I was there a couple months ago, and we stopped at a little market, the steaks were crazy good. The condo we rented had a community grill area and I cooked them there.
Howdy from Texas. We have a ton of small slaughter/processers coupled with their own family managed smoke houses and butcher shop found in communities of less than 1200 strung throughout our state. One of my favorites is “Caspers“ in Weimer Texas Going back several generations.
As mentioned previously, I have little doubt this is locally sourced beef from one of those shops and this convenience store is a point of distribution. There will be a loyal customer following that will clear all this out only to be quickly refilled.
Funny story:
Bought steaks from a guy selling them out of his white ram pick up truck at a gas station in Cleveland at 10 pm. Prime time for state purchases at a gas station. Looked legit at the time, truck had a cap, a fridge, a logo, etc. when I was buying it he hooked me up, purchased like six steaks from him. I defrosted them the next day, they were rancid, I thought maybe I’m going crazy so I soaked them in water and vinegar maybe get the smell out, fried them on cast-iron pan, butter based it, rosemary, the whole 9 yards……tasted like ass, not that I would know….gigity.
Then try to look up the company, it didn’t exist, shocker. My wife told me to get over it and let it go.
Two years later, I get employed by a water, mitigation company. We handle everything from water damage, sewage back up, fires, etc. I get a call, my dispatcher says there’s a guy calling about sewage overflowing in his bathroom. Our process is to get to the homeowner within the hour to secure the job, get insurance involved, etc..
Guess whose house I roll up to you, the old man with the white ram pick up truck that sold me the steaks. I said “hey, you sold me some steaks a few years back out of your truck.” He goes “how were they?” I said “fantastic, now can you please go show me your toilet situation?”

Yes. Many cows don't marble well and are grass fed. Much of the non-usa meat doesn't marble.
