Aside from his short story collections, most Stephen King novels are just psychological dramas.
It's a weird comparison, but he's much more "Buffy the Vampire Slayer" than those "Saw" movies. It's extremely character driven and doesn't rely on jump scares.
Hell, "Cujo" is mostly a book about a falling apart marriage and motherhood even though it's remembered as a story about a rabid dog.
Mr. Mercedes is more in the line of a mystery/thriller. That might be up your alley.
The Dark Tower series has horror elements, but is more a Fantasy/Western.
The Stand is not really hard horror, but has some spooky sequences.
Firestarter is more of a thriller than a horror.
I would recommend Different Seasons. There's four novellas in that one, and they're not supernatural (Apt Pupil is scary, but in the grounded and realistic way). It includes The Body (which you might know the movie: Stand By Me), Rita Hayworth and the Shawshank Redemption (also turned into a movie, and a damn good one at that), Apt Pupil (also got a movie adaptation), and The Breathing Method.
Different Seasons: stories are Rita Hayworth and Shawshank Redemption, Apt Puil, The Body, and Yhe Breathing Method. All dramas with a few thrills. Definitely not horror, at least I don't think so.

personally i thought the stand was very scary! but it might have been because i read it during peak COVID…

If you liked Fairy Tale, you gotta read The Dark Tower.
Dark tower series is good however I’m only on book 6 The 4th book wizard and glass was so so good it’s like a western it was bad ass
