I doubt it. Quinoa objectively has more fat, fiber, and amino acids (plus other nutrients like zinc, potassium, etc) than brown rice, plus has fewer carbs.

From what I find, basmati and brown rice have a GI of 50 but you might be right, either way if I'm not wrong, isn't it important to have a low glycemic load? So as long as you get something like brown rice you should be fine.

I'm glad you enjoyed it! This is definitely more on the kimbap side than sushi (I'm Korean and I make kimbap at home a handful of times every year). I've never had quinoa in mine, but I can see someone liking it if they're not a fan of white rice. I would try it again with medium or short grain sticky rice, mixed with sesame seed oil and a bit of salt for seasoning for the next one.
I usually put pickled radish, sauteed and julienned carrots, some protein(ham or tuna with mayo), eggs, etc.
You can also kinda put whatever side dish in them, and I've had a lot of different variations growing up since every family seems to make them slightly differently. A lot of families put various vegetable side dishes that they have laying around in the fridge. Most common one being a spinach side dish, or soy sauce braised root vegetable based side dishes. So the fact that you put in leftover mushrooms from the previous night is true to form in some way and I approve.

lol I am Mexican and born in Cuernavaca in Morelos, and traveled in the north, center and south of Mexico. Flour tortillas may be available, but they are absolutely not popular. My family also owned a restaurant and food is a huge part of my upbringing and culture. I think I have a good idea about Mexican cuisine 😆
