Halo. Fantastic world building. Tons of great characters and a complex plot and a lot of stuff happens. Very little romance but there are some queer characters.
Not strictly speaking fantasy (although Lord of the Rings is one of the influences) is Babylon 5. It's an old show, but from a world building stand point it is the only series that is equally as good as Game of Thrones. The series had a preplanned story mapped out across 5 seasons and was pitched at the time as "a novel for television". Some of the early season 1 episodes are a little rough but it picks up a lot during season 2 and events get more serialised as it goes along. It is ultimately one of the most satisfying shows on re-watch as every single one of the early episodes foreshadows, in some small way, the bigger arcs to come.
