How about southern tomato cracker salad? Just this year “discovered” a mix of saltines, fresh garden tomatoes, mayonnaise, salt and pepper. Dad gum delicious!

I’m in California so it’s going to be a while but the first thing I’m making is a tomato watermelon salad with feta, honey, balsamic vinegar, mint, and toasted pistachios. My tomato sandwich of choice is open-faced with burrata, pesto, basil, and balsamic.

What’s sad is I’ve been absent mindedly saying this exact thing since probably January. Willy plants look good, even spotted a couple blossoms, but I got a long long wait before I get a good old tomato sandwich.

For me - cheap white bread, romaine, thick slice of tomato, S&P, thick bacon, mayo. Can taste it now. Probably 30 days out for us.
