You can also use a peeler to slice very thin and lay them spaced out in microwave. Just a tiny bit of spray oil needed. Turn over and do other side, Much more healthy than deep frying. Keep an eye on them though, they crispy up fast! I used to do it as a kid when we ran out of crisps.

I make one similar. If you don’t have the greens you can also add broccoli or cauliflower. Just do it towards the end because you don’t want them collapsed, just cooked.

Ottolenghi has a fantastic oven-roasted beetroot recipe but I couldn't find it online. In terms of soup, have you ever had Borscht? It's a delicious, slightly sour soup (or rather a soupy stew). Traditional borscht may contain meat but there's absolutely no need to replace that.

Ukrainian Borscht. It actually has a lot more other vegetables than it does beets. Although even that small amount of beetroot is enough to make the soup red and give it the signature flavor, it's not overpowering. (Although I *love* beets, so my perception might be biased.) Yess I just made borscht last night! I recommend adding butter beans to up the protein content a bit. Also adding some umami elements like miso or yeast extract helps deepen the flavor since it’s usually made with meat/meat stock.

I make sourdough bread about every five days. One of my favorite recipes is to peel and grate one or two medium beets and knead it in before the final proof. Delicious earthy sweet flavor, and absolutely gorgeous. You could easily do this with conventional bread recipes too.

Fermenting food can be intimidating and some types of fermentations are finicky, but lacto-fermentation simply cannot go wrong if you follow the most basic rules. It's been a way to preserve food for millennia, in suboptimal conditions and without the slightest notion of sterilization. The only risk is that you don't like the end result... Beet kvass is akin to a sweet and salty purple beet sauerkraut (another lacto-fermented veggie) juice.

I add beets when I make rice so it makes it pink which is fun. Also beets + hummus. Beets have the earth flavor so you could pair with the opposite like spicy (chili) or sour (tamarind, lime) if you want to mask it.

Cook and cut into cubes. Add an equal amount cubed avocado. Add some fine diced red onion. Mix together with balsamic dressing. Refrigerate for an hour and eat. My non vegan friends also crumble in some feta.

I puree them and add to seitan recipes. It provides color, flavor and also helps to tenderize the gluten.

I generally do it raw. Seitan gets cooked too death anyway so I don't see the point. My blender can handle them raw just fine. Maybe if I had a less powerful blender it would help to soften them first

Roasted beets and radishes are great together and if you go long enough to get some nice browning and caramelization it’s even better! You can do any seasoning you like, but I do particularly like ranch seasoning. You can find some premade ones that are vegan or you can make your own.

You can also make it as a slaw with grated carrot. So twice as much carrot to beetroot, then drizzle with balsamic vinegar, Evoo, salt and pepper. You can add whatever herbs you like scallions are quite good too. Then just let it sit for a bit. It’s great as part of a “bowl” with roasted veg, some grains, salsa verde etc. even felafel would be good or just some roasted chickpeas etc.

You can make "flannel hash" with potatoes, beets, and other ingredients. Normally I just shred a few beets and some white and sweet potatoes with the grater attachment of my food processor, add some finely-chopped onion and minced garlic, toss it all with a lot of olive oil, salt, and pepper, and roast in the oven until everything is tender. Serve with avocado, vegan sour cream, or other hashbrown toppings. I don't like plain beets but I enjoy the flavor prepared this way. I think you can also make flannel hash by cubing all the ingredients instead of grating, I got the idea from a cookbook that had a cubed, pan-fried version I believe.

Beets are totally different when grilled from raw. A little sprinkle of seasoning and a drop of oil and they are lovely as “beet steaks”. If you’ve tried those and it doesn’t work for you, I would find a vegan beet brownie recipe.

Juice them! It’s very delicious! Example for 16oz juice .. 4 ounces beet, 4 ounces carrot, 6 ounces green Apple, 2 ounces lemon or lime … beets have that earthy taste and lemon or lime reduce it down to a more sweet tart flavor. So u could add more of those if the beet is still strong flavor. You can adjust the ounces of any of those ingredients according to your preferred flavor profile.

Use to replace some of the carrot in a carrot cake (you might need to increase the sugar or use slightly more frosting depending on the sweetness of your beets). There are also chocolate beetroot cake recipes out there. You can grate them into salads to add color. Roast them with a glaze to bring up the sweetness and tone down the dirt flavor. Or add them to a mix of veg for roasting (carrots, potatoes, parsnips, etc).
