A piece doesn't have to be lost so that a pawn can promote to it, you can always promote them to either a queen, rook, bishop or a knight.
Pawns also must promote to a piece when reaching the last rank.
It's been a while, but if I remember correctly you could theoretically box an opponent's king in by having your piece change sides - the king would be able to displace an opponent piece and go to where it was, but you can't take pieces on your own side, so the king wouldn't be able to move there.
But you could attack with other units.
Lets say the King is in the corner, getting attacked by a rook next to the edge. A Knight puts pressure on the diagonal escape route. So the king could only go to the side, which could be blocked by a "pawn promoted to his own side".

If the own pawn was a Queen, the king could attack her, but he can't attack his own pawn so hes checkmate.
You can't both promote and move your rook to attack the king in the same move. So if you promote first then it's the other guy's turn, and he can move the promoted piece to open the way for his king.

There is no limit, you can have 9 queens on the board.
