Well it depends what dashboard has been installed on it and how it was set up, should see the console info somewhere, the most popular ones in the day were Evo and Unleash. Some of the skins were pretty poorly designed but there should be an option to boot to the original dash, maybe even disable the mod but full removal can be tricky.
If you can make a post with some photos of the screens on r/originalxbox the uber pros will be able to identify the setup in an instant
Try to boot it using the DVD eject button. (When it's powered down)
I used to have a mod which booted with the power button and also allowed me to boot into the original os using the eject button
The seller is a pawn shop, so they probably don't know. Probably just hit the power button, verified that it boots up, then put it right on the shelf for sale.

Pawn shops are so lazy now a days. They need to check out the stuff they get so they can advertise it right. I would of been pod and took it back.
