You should be able to just set it to not auto-renew. It's a bit of a PITA, but there are guides on how to do it, just like canceling various other subscription services. And of course, worst case, if you remove any and all payment methods from your account, there won't be anything to bill it to come renewal time.
Go to the subscription section of your Microsoft account and turn off auto renew. Very simple. My GP expires in 2 years and I already turned off auto renew. I just buy GP cards when they are on sale and redeem those.
