YTA. If you can't be quiet, the most you could say is it's "not to my taste". Nobody can argue taste ("de gustibus non disputandum est"). To add in cooking tips is a direct insult.

YTA. If you don't have anything nice to say don't say anything at all. Especially when your opinion wasn't asked for. If you don't like her cooking suck it up or stop eating it

NTA You attempted to be polite and/or kind in your honesty. Perhaps simply stating it wasn’t your cup of tea may have been a better approach. You cannot take it back now. Neither of you were malicious, so please try to mend fences without lying about enjoying the taste of her food. Look for local spots for cooking classes and gift them to her (perhaps you or your husband could go too so it’s social). It may help her future dishes to be more palatable.
