I like dirt under the fencing. I know this is an adorable video game, but the dirt under looks more “real”. I feel like the left looks more clean/crisp, which makes it look more “game” than “lived in”.
Same reasoning but different result: You wouldn't plant or use the field directly to the fence but leave a bit of space. In the end, both look as realistic as you think of them 😁
No dirt under the fencing but put a custom design down there, mostly transparent but with a little uneven circle of various browns that lines up with the fenceposts.

I'd say no dirt under the fence
I've always been a fan of rows of crops, so I've always only put dirt under where my crops are, rather than the entire area. It's not like you'll constantly process and dig around where you put the fences, at least not in a realistic sense
the one without is personally preferred due to aesthetics, but takes more space.
The one with dirt underneath takes up less space, and gives more of a ‘rough’ feeling to it, as if the care and growth is more meaningful than the looks.

Most would still have woodchips or some other mulch than just grass left in between.

It looks more pleasing but decreases your produce planting area. Once the snow is gone it's going to look great outside the dirt.

It's the barbed-wire fencing. Check your Nook Miles store every day, there will always be two fence DIYs available and they change all the time.

On my island I don’t have dirt under fencing… but these comments are making me change my mind 😂
