Aside from fighting being a part of Roddy Pipers repertoire not to be wasted, the length of the scene exemplifies the message of the film and how difficult it can be to show people the truth. Even when it's right in front of them.
Both of those were really great fight scenes. I loved when that other Japanese soldier made that weird sound, when he heard Ip Man wanted to fight 10 men at once.

Bob Odenkirk is the least impressive looking action movie protagonist and that really helps sell it. I gotta respect the hell outta him for this role Unlike all those beefy dudes that have been gym rats their entire life or been in dozens of movie fights before a big role, this guy is a comedy writer. He had to go all out to get in that kind of shape and learn all that choreography to be that impressive.

I was just telling my friend yesterday that Inigo Montoya was the first character to make sword fighting cool for me as a little kid. I watched that movie with my mom and I was amazed by how cool this guy was.
Still has one of the best lines of the movie, too. "I want my father back, you son of bitch!"
It's so good because it's a fight with a story. Yeoh's character keeps choosing weapons that are normally advantageous against a sword, but the Green Destiny is so OP Ziyi's character keeps breaking them up to the point Yeoh straight up sacrifices her final weapon, a two handed sword, to get up close to her opponent. It's such a well done fight.
I really enjoyed how she doesn't have superhero strength in that film. The dudes are stronger than her but she wins with grit, brains and skill. And judicious use of weapons.
That's a great one but I think the Desh fight in Ultimatum that begins when Bourne jumps through the window and they duke it out in close quarters, ending in the shower is probably my fave in the franchise. It just felt really brutal and messy yet some fantastic little maneuvers in there too.
The improvised weapons really made it special too. Nobody expected to see a book get used to severely beat a man. Then in the bathroom, you think why would Bourne grab a towel? Well because, much like the book, Bourne can turn it into a great way to kill someone.
The fact that they both immediately turn an unfamiliar environment to their advantage shows off their super human spy abilities. We got an excellent, unique scene instead of another quick brawl or shootout.
The movie may not follow the lore, but damn are the fight scenes amazing.

They intentionally kept the action and Collin Firth focused in the center of the screen, to have a messy fight that still felt controlled and coherent!
Considering how chaotic the whole scene is, the shot composition and editing to make it feel controlled and easy to follow is just a masterpiece of action film making.

The fact that it was all live mic'd audio, and the technical aspects (especially Val Kilmer's handling of movement and reloads) were so accurate that military and law enforcement agencies use them as training examples, is awesome.

All of the actors in the movie hit it out of the park, but Russell Means and Wes Studi brought it to the next level. The look of abject horror on Chingachook's face when he saw his son dying -- and with him, all hopes for his people surviving him -- was gutwrenching.
When I first saw this in my early teens, I worried Magua would kill him as well, as I would expect of an elite and deadly warrior fighting an old man. Little could I comprehend then the unrelenting hell that a grieving father would bring down upon his child's killer.
