So the Michelin inspectors generally look to these five principles [when judging a restaurant](https://atlanta.eater.com/2023/7/11/23790928/michelin-dining-guide-coming-atlanta): 1. **Quality products and ingredients** 2. **Harmony of flavors** 3. **Mastery of cooking techniques** 4. **Voice and personality of the chef reflected in the cuisine** 5. **Consistency of food and service between visits by the inspector** There aren't many places in Athens that I think meet ALL of those criteria in a reasonable and reliable way. I might say Five & Ten from a few years ago... but I'm not sure these days. I think The National and Seabear, actually, could be contenders, but unlikely to make the final cut. I also think even Cali'n'Tito's hits the mark for a few of those criteria, but not all. (Check back in 5 years for Puma Yu's.) To be honest, though, any Athens spot is unlikely to hold up to that final point, no matter the overall quality otherwise.

Yeah doubt any place in Athens could get a Michelin star but they have a lesser award that The National might be able to get.

The taqueria in the back of that little mercado, La Jalisco, out on the spur road near the Jefferson Highway next to the silos. Kinda curious how much the ambiance will hurt them in the final rating.

I think it should be Nolan, downtown athens. Its owner is a greek japanese chef named kontizas, master chef judge also. He is very disciplined and keen on details.

The correct answer based on the actual way Michelin inspector's grade is Seabear. I would love to say Tlaloc based on how damn delicious their best dishes are, but you'd have to blindfold them on their way in to get any respect. There was a food stall in singapore that had and then later lost their star, so it doesn't have to be a traditional "fancy" restaurant to pull it off BUT Seabear keeps a small but fantastic menu that really wows. 7 years ago Conde Nast Traveler marked them as one of the best 60 restaurants in the world". It was one reviewers opinions but when you go and get a sampling of that weeks oysters, some fried clam strips, an oyster shooter, and some skillet okra, I believe it every time
