Looks great! I make mine with 20% rye flour, which complements the taste. With my machine the olives get really mushed up so I add them at the fruit and nut beep. I only cut the olives in half and coat them with flour. They still get broken down from the few minutes of kneading that’s left.

I've tried the same, but I find when I add them during the fruit and nut bleep, the olives only really get pressed into the outside of the loaf and not incorporated evenly into the loaf. So I've succombed to either putting them in at the start and them getting blitzed or kneading them in myself prior to rise. How have you found it?

Do you mix them *thoroughly* with flour before adding them? I find that is necessary. If it’s still not working maybe your dough is a little dry.

Yeah, I find they just fall to the bottom of the pan if I thoroughly mix them with flour. Perhaps the dough is a little dry. When I so add them at the start of the cycle, I find I have to add a lot of extra flour as the olives release a lot of moisture too.

Maybe my old Panasonic is better at kneading (it is very good).

I've got an SD-2511 and it's pretty good, but I think there's a few nuances that I'm still getting used to!

I think that’s a vertical model; maybe they aren’t as good at mixing things in.

This was my first time in my bread machine journey incorporating a “mix-in” ingredient - after reading some reviews on the original recipe, I decided to include them at the start with all the other ingredients. My bread machine has 2 paddles and mixed them in perfectly - there was a good amount of big and small olive pieces spaced throughout the loaf.

Ah that's good. I found when I put them in at the start, they'd break down into lots of small pieces evenly distributed with no big pieces. But I like to have large pieces to get a bigger hit of olive too haha. Having both big and small pieces sounds perfect.

Rye flour is a great idea - I’m going to try it as you suggested for next time! I think it’ll give it a nice rustic color too.

I love olives and recently added kalamata, feta cheese, fresh oregano and chopped pepperonci to King Arthur's English Muffin Bread recipe. Wowsers. 100% will make again.

The bread machine recipe describes baking in the machine. I always make a double batch though, so I bake mine in 2 loaf pans. Either way, it's a recipe that everyone seems to love. 👍
