>3 hard boiled eggs (peeled) I literally lolled at the "peeled". I like to add cayenne to egg salad. Gives it a really nice kick.

[deleted]

Unpeeled if you want the taco bell crunch wrap version

MrMoonManSwag

After growing my hair longer, I can understand and forgive a hair in my food. You make me crunchy eggs once and I turn into a “I don’t eat breakfast” type of person at your house in the morning.

[deleted]

What if I referred to it as "reconstructed egg pate" and charged $26.99?

MrMoonManSwag

How nice is the plate?

[deleted]

No plate. Spoon. Amuse bouche.

curien

If anyone eats it, you'll watch with an expression best-described as "amused douche".

Elias_The_Thief

r/WeWantPlates

Amberatlast

Depends on if I can get a $10 glass of OJ to go with it.

Inconceivable76

Fresh squeezed from a can.

[deleted]

I once got a shell in an Egg McMuffin sometime in the late 80s as a child on a road trip with my family. I still think about it every time I want a fast food breakfast sandwich.

[deleted]

And the shells gives a good calcium boost 😂

wdjm

I prefer smoked paprika. Nice flavor without as much heat.

JesusDied4U316

Smoked pap and cayenne for me

buShroom

Smoked paprika is always a hit wherever eggs are involved, IMO.

Ottomann_87

Hot paprika and dill, delish.

FFF_in_WY

This is the way.

pantzareoptional

I made egg salad with Sriracha, lime, and cilantro once and let me tell you, it had no business being that tasty!

canarygirl2

Yum

Liar_tuck

Cayenne sounds good. I usually add a dash of paprika and brown mustard to mine.

GuaranteedToBlowYou

Cayenne is good. I also like to add pickled jalapeños. And smoked paprika.

AlbatrossSenior7107

I mean, peanut butter has peanut warnings on it. So, there's some pretty dumb people.

JazzManJ52

I use a few heavy dashes of Cholula for a similar effect. Love that stuff.

mj10023

I like adding old bay to my egg salad, but I also have a special love of old bay seasoning in general.

metalshoes

Obligatory topping of the most stale, tasteless Paprika you can find sprinkled over the top.

poopfacelarry

Glad I wasn't the only one!

MistryMachine3

Mash it in with the yolk for extra calcium

Ottomann_87

Hot paprika and dill, delish.

laserox

Sounds yummy! I make mine with some spicy brown mustard and a little smoked paprika. Gives me deviled egg memories.

OmnomVeggies

Same.. sometimes I add a little pickle brine. Yum.

TA_totellornottotell

I add capers and caper brine.

Hermiona1

Oh I love capers on pizza, now I want to eat egg sandwich with capers.

justartok333

I like them in tuna salad, too, along with celery seed and the usual other stuff.

Simple-Mastodon-9167

Brine from pickled veggies (peperoncinis, capers, pickles etc..) is a secret ingredient in a lot of my dressings and salads

sweetpotato37

I was going to say, gherkin juice makes for the best egg sandwich!

SnacksAndThings

I've been adding dill lately. Delicious!

itsrocketsurgery

Yup that's how I do mine too. The mustard really makes it for me.

psirjohn

I do that, plus add a bit of celery salt, works really well.

ughlyy

the only way i can eat egg salad is basically just chopped deviled eggs. i think normal egg salad is just yucky

BRAX7ON

Celery adds a great crunch. And Dijon mustard is an absolute must

Day_Bow_Bow

If I were making this concept, I'd dissolve a little sugar in the mustard and mayo over low heat, as that's how Mom's devilled eggs start.

[deleted]

I’ll try it. Thanks 🙏

fairyprincest

I love a little powdered hot mustard instead of regular mustard. It's the way my mom always did it, adds a bit of heat

pisspantsing

This recipe didn't even call for mustard!

djsedna

and that's why it's wrong!

twitching2000

Yellow curry powder in egg salad is so yummy

[deleted]

I’m going to give it a go.

wtshiz

Thanks, are you certain about the quantity of garlic and onion? Because that seems like it would be *intense*.

Kernath

Idk about the garlic, raw garlic would kill an egg salad for me. But that sounds like the right amount of onion. It should be minced as finely as you can possibly get it, and I like to rinse my onions in a fine mesh strainer if they’re going in a tuna/egg salad. It rinses away some of the acrid, burning compounds that can leave you with reeking breath, and you get a cleaner, fresher onion taste.

wdjm

For 'as finely as you can get it', try grating it. Kills the eyes, but gives tons of flavor.

Kernath

Ah see, that might take it too far into genuine purée territory. I want atleast a touch of texture from my onions! But I bet it does give great flavor.

wtshiz

You like an egg salad that is 1/3 (or more) onion? Really?

Stoopmans

Bro, there's an entire subreddit dedicated to people who like onion # No I mean they _really like onion_ # I mean I like union in lots of things but these guys take it to a level I never could imagine

KorbanDidIt

One of my fondest memories of my uncle is when he was showing me the garden he had, he had quite the green thumb, and I saw the onions! He said I could have one and I was thinking "I can't wait to show my mom and cook this" and he then informed me I could eat it like an apple. Mind. BLOWN. I peeled the outer layer and started eating it and to this day that was the BEST onion I've ever had. Anytime I cook with onion I eat some, it prevents me from crying and tastes delicious. I don't overdo onion when I cook, I keep it in good quantities. But I'll never forget that day!

tiny_poomonkey

I too have solidarity with onions ✊🏻

OkSmoke9195

Are you in the Alummni association

Kernath

I really do. Keep in mind I'm taking it to as fine a mince as I can do easily at home. It's just shy of a paste. Something between these two textures in [this video.](https://youtu.be/fTgYOQ8XRdY?t=98) Then rinsed in cold water and shaken dry. my go to recipe is 8 eggs and a whole small sweet onion (minus some of the internal layers that are difficult for me to mince uniformly with my mediocre knife skills). I add minced celery and minced sweet pickle as well for additional crunch and complexity of flavor. I'm not here for just eggs and mayo.

wtshiz

I tip my hat to you.

lykosen11

You can eat an entire red onion raw on a good sandwich

wtshiz

No you cannot eat 2 cups/500ml of raw onion on a single sandwich and call it good.

lykosen11

Try to stop me

eiramatsirk

Sounds like a you problem!

blacknumberone

Onion and mayo sandwiches are delicious.

[deleted]

[удалено]

[deleted]

Adjust to your taste. Personally, I like it intense.

wpgpogoraids

What size were the onions? I have small red onions and large ones and I feel like 1/4 of a small one would be appropriate but 1/4 of a large one and I’ll be able to clear a room with my breath.

eatitwithaspoon

i was thinking the same thing -- for only three eggs? a sprinkle of powdered garlic and maybe 1/8 cup of green onion tops would be much more gentle. lol

[deleted]

[удалено]

TepidCatastrophe

Instead of separating the yolk from the white you can just use a cheese graterand grate the egg. It makes the sandwich so much smoother and takes a LOT less time.

DontMessWithMyEgg

I mash it against the side of the bowl with the tines of the fork. Less dishes haha.

Altostratus

Same. I don’t separate whites and yolks either. Just smash and chop it up. I like like it chunky though.

DontMessWithMyEgg

Yep I’m lazy. Boil. Peel. Mash in bowl. Stir in mayo/relish/salt/pepper. Eat.

Expensive-Committee

I used a fork until I had a egg salad craving today of all days. I was too lazy to clean a single utensil and in a complete madness used my pastry cutter to mash the eggs. It worked remarkably well and I’m never turning back.

ThisSideOfThePond

I have been known to use my hands.

sadorchids77

It's never occurred to me until this sub there was anyway but this way.

hedoeswhathewants

One time my sister saw me doing this so she bought me an egg slicer as a throwaway gift. I said thanks...and continued to use a fork. It's super easy and then I use it to eat the egg salad or use it to make the sandwich with the egg salad.

Lilycloud02

Yup haha. Two forks and bowl, that's all I need!

01134_01134

Interesting hack! I use an egg slicer, rotating the egg between passes to slice it three times. It makes perfect little egg white squares!

VIJoe

If somebody would have asked me before this thread, I would have said that they were a fool for doing anything other than the rotating-egg slicer method.

Outspan

Oh wow this is up there with the day I learned about steaming my eggs to hard boil them. You sir or madam just changed my life and I thank you.

TepidCatastrophe

I feel honored my Mom's odd cooking habits have made such an impact. She was an amazing cook and has been gone for 11 years so if you are being serious that means a lot to me that her spirit carries on in egg salad sandwiches (okay that sounds sarcastic but I'm being totally honest 🤣)

Outspan

Oh I'm absolutely being serious, I'll think of your mom while having grate egg salad sandwiches tomorrow for lunch.

CatLyfe2020

It makes total sense! I believe that someone's spirit is never really gone as long as memories of them, tips and tricks like these, recipes, impacts they had on others, or anything else like this still exist 💕

TepidCatastrophe

I feel the same way! And it seems the older I get the more I'm not just turning into my mother but I'm starting to understand her as well 🤣

OkSmoke9195

Streaming the eggs takes everything that makes boiling imprecise out of the equation. Never boiling again

Basalix

Go grab a wire cookie cooling rack with the smallest holes you can find. Peel the eggs and then press them through the square holes with your hands over a bowl. It's fun, easy, and all the pieces stay similar in size for a nice bite and chew. Also easy to cleanup.

[deleted]

This is brilliant

LaMalintzin

I don’t love hard boiled eggs but I always think egg salad sandwiches seem like a good idea, and I never heard of a recipe like yours where the white is the solid part. It sounds worth trying to me prob this weekend and again I don’t even like hard boiled eggs lol. Boyfriend will eat it if I don’t like it

glitteringgin

A pastry cutter works pretty well too. Or a potato masher, I've used both but usually default to a plain 'ol fork.

djsedna

Yeah, everyone here is going way too far. It's smashed egg in mayonnaise and seasoning. *Just smash the fuckin' egg*

Rusalka-rusalka

Years ago a coworker brought egg salad to work to share that was amazing. It was fluffy and had a great taste to it. When I asked them how to make their egg salad, they mentioned adding some garlic powder and a fork to mash the eggs, that was the main change in their recipe. I'd love to try yours too some day, but I'm kinda over egg salad since an obsessive stint with it in 2020. :)

uhhh206

Don't you hate that? When you find a food you *really fucking love* and you eat the hell out of the perfected version of it, but then oops, now you're done with it, possibly forever? I've never been one for egg salad sandwiches but I ate one-to-two fried egg sandwiches daily for a period of a month or so and have only been able to tolerate them sporadically ever since. Edit: clarity

Rusalka-rusalka

I hate it because I become obsessed with something like egg salad and then I get in a groove with it and buying supplies so I’ll never run out of it and at some point I’ll hit a wall and find it totally gross for some reason and then all that prep and planning is kinda wasted.

OkSmoke9195

Fried egg sandwich on a cinnamon raisin bagel with sliced ham and yellow cheese. Mmm

Scapular_Fin

I'm about to make this, and load that shit up with pickles, and eat it on two sliced of bread like a proper sandwich.

Kangabolic

Peeled you say? So that’s what I have been doing wrong! ; )

[deleted]

🫣

NightEnvironmental

Or not? Reminds me of "overshare" themed insurance commercial where a woman proclaims that "the crunch is exquisite"

myvalleywasgreen

Ooh, love an egg salad sandwich. I don’t do garlic in any variations of mine but my fav version right now has finely diced onion that i caramelize in a pan. Diced celery, mayo, lots of a good curry powder, salt, pepper, served on toasted cinnamon raisin bread. Comfort food.

[deleted]

Sounds perfect with a cup of coffee.

Ok-Set-5829

Sounds good. I'd add a little diced celery for some crunch

ColdYellowGatorade

My mom would always make us egg salad sandwiches for a day at the beach. Brings back memories and i'll have to try this out.

[deleted]

I hope your memories are wonderful.

ColdYellowGatorade

Happy memories for sure. Thank you for sharing the recipe.

Medium_Spare_8982

The actual name of the cut on the basil you are looking for is “chiffonade”. Try the same recipe with fresh tarragon too.

[deleted]

Chiffonade 🙏

its_the_ben

This sounds amazing. Something I’ve seen that really blew my mind for open-faced egg salad sandwiches was: Take a few medium-boiled eggs. Yolk still custardy, almost runny. Chop them into quarters. Add them on top of the sandwich, with the yolk side facing up. Then add the basil.

[deleted]

That is next level incredible 🥰

wdjm

I'll counter with my "Not 'the best' but a perfectly adequate and *really* quick & lazy egg salad recipe: Hard boiled eggs, chopped/smashed, then mixed together with Ranch dressing.

robemmy

I like to add curry powder to mine

_SkullBearer_

I always add just a splash of balsamic vinegar to my eggs, really adds a lot.

maybeinoregon

Thank you for posting this recipe! If you like things with mayo, might I suggest either [Duke’s](https://dukesmayo.com/products/real-mayonnaise) mayo, or [Kewpie](https://www.kewpie.com/en/products/mayonnaise/) mayo. Dukes has a very slight zing to it, and Kewpie is so light and wonderful tasting, it’s all we use on our BLT’s.

[deleted]

I did use Duke’s. I switched from Best Foods.

coyotezamora

East of the Mississippi = Hellmann's West of the Mississippi = Best Foods Same mayo

maybeinoregon

You know your perfected recipe is not gonna be as good with X brand, so put Duke’s mayo in the recipe! Celebrate your mayo! Haha

[deleted]

🎊

DukeBabylon

I started putting smoked paprika in mine (chicken salad as well) just to change things up for once and never went back. Change is good sometimes. Now I just need to get my bread game down.

[deleted]

I use Cuban crusty bread or Vietnamese baguette

Amesaskew

This is similar to mine except that I add paprika and fresh dill. Also, must be Dukes mayo.

[deleted]

I 🫀Duke’s

Advanced-Duck-9465

But how much of it? 🤔

TahoeLT

Ain't every day you get an egg salad sandwich. This sounds pretty good, I'm not much of an egg salad guy but I want to try this!

RLS30076

My preferences only: no to the garlic for me but yes to the onion. a teaspoon or two of dijon mustard. also add an equal amount of finely minced celery, a few chopped cornichons, and minced Italian parsley instead of basil.

Uruz2012gotdeleted

Dice a pickle. Not relish. A diced pickle. There is a massive difference in texture.

dcrico20

This is pretty close to how I make it except I add some Dijon which punches it up a bit with some zing.

Altostratus

I use dijon in my homemade mayo, so I always get the zing

Physical_Drive8123

Sounds great!!!! I like to add horseradish to mine, too.

[deleted]

Great suggestion. I’ll give it a try.

vapeducator

Mayo, mustard, and pickle relish are my minimum ingredients for egg salad, tuna salad, chicken salad, potato salad, etc. Thinly sliced celery, onion, green onion, fresh ground pepper, and fresh herbs step it up a notch for flavor and their crunchy contrast.

TreasonTits

I do eggs, mayo, salt, pepper, lemon juice, and top with capers. Can eat an alarming amount of this as long as there’s good bread to go with it.

Cptrunner

No crunchy stuff in my egg salad. Onion powder, mayo, Golden's mustard, salt and pepper, hot paprika to top.

jeevesthechimp

Best egg salad sandwich I got was from a deli. It was pretty standard, had a very small amount of sweet relish and enough mustard to add zing but not overpower it. What really set it apart was that they served it between layers of shredded iceberg. Not thick layers of iceberg, just enough for some texture. Side note, white bread is the best for egg salad. It is soft enough that you can bite right through it and not have the salad squeeze out the other side.

[deleted]

I prefer my lettuce shredded too. 👊

TheSukis

Hell yeah! Egg salad sandwiches are so underrated. I have mine with pickled banana pepper rings and diced red onion.

ThatsMarvelous

I filed for an LLC for the chopped egg whites and I'm happy they'll get the proper tax treatment but I don't see why that step is necessary

[deleted]

I wish I had the vocabulary to describe how different the chew is when the whites are left in larger chunks.

Ergone56

I have actually found I prefer my egg salad with Greek yogurt instead of mayonnaise. But I'll have to try this recipe. Thank you!

[deleted]

Nice alternative

hartemis

Lemon juice and zest is a nice addition and would probably go well with the basil.

Lylac_Krazy

I knew there was something I was missing. Remove the shells.....hmmmm

breadnbutterfly

I do something similar but use scallions instead of onions, and add an avocado to the egg yolk paste. Then instead of basil i top it with chili garlic crisp.

BadgerTB

Sounds delicious, but I'm definitely not going to be making that before a date!

J33P69

OMG I think your boyfriend is my Grandma! Except it's on toast at Grandma's.

Geowoman2

Chopped celery, chopped onion, dill

BowtiepastaMasta

Peeled? I’m out.

SusanGreenEyes

I skip the onion and garlic and add smoked paprika, pepper and salt.

Quarkchild

I’m high af someone prolly already said but that’s called chiffonade what he did to da basil 🌿

tweedchemtrailblazer

If you soft boil your eggs so the yolk is slightly jammy you can use less mayo for a slightly healthier version. I’d also replace the basil with pickled jalapeño relish but that’s just me

emmybby

Ever since learning about the kpop egg sandwich with strawberry jam in it I always add a thin spread of strawberry jam to my egg salad sandwiches. It's genuinely so good LOL though I don't think it would pair very well with this specific egg salad, this is definitely a more savory one. Sundried tomatoes would go really well with this, also I bet if you caramelized the red onion it would be great too! I love dressing up mayo based salads in all different ways like this. Chicken salad with curry powder and dried cranberries + almond slivers.... soooo good. Potato salad with [this roasted serrano and garlic sauce](https://www.rickbayless.com/recipe/green-chile-adobo/), red bell pepper, queso fresco and extra crispy chopped bacon. Only one I like to keep basic is coleslaw, it's just so good in its most basic form.

adam_demamps_wingman

I need some finely crushed dried parsley in there. Not fresh but dried and finely crushed. It provides a base flavor that other stuff can play off of.

MewBladeXxX

This sounds delicious! Definitely going to have to try it tomorrow.

Mother_Mach

Oh I hadn't tried it with basil! Theres a place near me that makes an egg salad sandwich with apricot jam and it's delightful!

lisasimpsonfan

I like to mash the yolks into the mayo and spicy mustard mix then add the rough chopped whites and chopped spring onions. Basic as a pumpkin spice latte but it hits the spot every time.

bettertree8

What no celery? You gotta have celery. :)

sfmchgn99

Holy yum!! I'm going to try this and add a bit of Dijon mustard

km1116

And chili crisp...

[deleted]

Absolutely! If you need some heat, sprinkle some chili flakes.

Little_Season3410

I do mayo, spicy mustard, salt, pepper, paprika... so good. This recipe sounds great too though! And now I want egg salad! Lol

awful_source

Way too much raw garlic. I’d omit it completely.

Puzzleheaded-Tone119

add some dill pickle juice, you’ll thank me later

mvmauler

Aka the Fart Sandwich

mstrokey

Deconstructed Deviled eggs on toast. Sounds delicious

[deleted]

2 raw garlic cloves? dang, that's a bit too much for me.

Uncrowned888

Sounds tasty, will try.

XBL-AntLee06

Sounds great! I personally would chop up some fresh bacon in there!

jmg733mpls

Cutting the basil that way is called chiffonade

moody_dudey

I ferment my eggs for egg salad and it's a hit.

Tengoatuzui

Can you show a picture of it? And is the garlic uncooked?

[deleted]

I can. I’ll have to make another batch.

lecherro

How much mayo???

AllDamDay7

Pickled eggs or you aren’t doing it right 😉

sarahwlee

We add yuzu kosho

AliceAnne1

Sounds delicious!

Strict-Turnip-2346

I prefer to keep the egg shell on for that extra crunch. /s I will be trying this, I’ve always wanted to make egg salad but could never find a good recipe. Thanks!

ouchwtfomg

Try grating the egg for the softest fluffiest texture ever

[deleted]

I make my egg salad like deviled eggs. Haven’t had a complaint yet.

bizguyforfun

Ask your BF next time to sub a bit of the mayo with a good squeeze of horseradish sauce. That will put a bit of "lead" in the ol' pencil...if you know what I mean!!!

mgraunk

Isn't this just a basic (open face) egg salad sandwich? What do most people consider an egg salad sandwich?

Roydogg99

2 cloves of garlic to 3 egg seems a wild ratio to me. Love the stuff but would tone down for a lunch option especially if at work etc. Sure its delish tho!

threvorpaul

I'm taking a bit the japanese egg salad sandwich approach and add some soft boiled eggs to it. makes it that much creamier and less mayo needed

[deleted]

I had a soft boiled egg salad sandwich once. It was delicious. I can’t figure out they composed it.

threvorpaul

ah i wish i had the recipe written down somewhere. It was a random japanese youtube video with subtitles. from what I can remember 3 hardboiled eggs and 2 soft boiled. egg white & yolk separate a little dashi powder, kewpie mayo, a mild mustard, sugar, salt pepper. egg yolk mixed to absolute mush and egg whites rough chop. texture was really nice, firm whites and mushy creamy yolk. toast on the lightest toast setting. optional chili/cayenne powder. i believe that kinda was the recipe, don't quote me on that though. lol I'll try yours egg sandwich too

[deleted]

I really enjoyed the complexity of the soft boiled egg sandwich. I have a hard enough time making a poached egg. It never sets up pretty.

threvorpaul

oh poached? easy peasy, follow instructions. I facepalmed at how easy it really was. [poached egg foolproof method](https://youtu.be/mrq3iZcvHAw)

FILTHY_GOBSHITE

I see no cayenne pepper, no mustard, no sweet pickle relish. Dunno how to feel about this!

Puzzleheaded_Age_748

Same recipe as mine minus the garlic. Ill give it a try next time 🙂

[deleted]

The basil works well with garlic.

ColHardwood

Thanks for sharing, will make. But, how much mayo?

[deleted]

I used 3 tablespoons. Use as much or as little as you like. The ingredient measurement is very flexible.

cutshop

Oh man, Friday, I really wanted an egg salad sandwich and I was just obsessing about it and I was like, 'Man, I'm gonna make one of those.' So Saturday, I went out and got, like, a dozen eggs and then I boiled them all and I just, I spent, I dunno, probably three hours, like three and a half hours making, you know, the mayonnaise, and the onions and paprika and, you know, the necessary accoutrement. And then, by the time I was done, I didn't really feel like like eating it.

HaddockBranzini-II

I love garlic, but not in egg salad. I will try the basil though.

Ephisus

An egg salad without celery seed is an egg salad not worth having.

[deleted]

Worth trying out. 🙏

pseudoanon

That plus imitation crab (as finely chopped as you can get it, or run in a food processor) is my favorite salad.

[deleted]

Sounds incredible

husky_shoplifting37

Thanks for sharing your boyfriend's egg salad sandwich recipe! It sounds delicious and simple to make. I appreciate the detailed instructions, including separating the whites from the yolks and incorporating fresh basil for added flavor.
