I once got a shell in an Egg McMuffin sometime in the late 80s as a child on a road trip with my family. I still think about it every time I want a fast food breakfast sandwich.
Idk about the garlic, raw garlic would kill an egg salad for me. But that sounds like the right amount of onion. It should be minced as finely as you can possibly get it, and I like to rinse my onions in a fine mesh strainer if they’re going in a tuna/egg salad.
It rinses away some of the acrid, burning compounds that can leave you with reeking breath, and you get a cleaner, fresher onion taste.
Ah see, that might take it too far into genuine purée territory. I want atleast a touch of texture from my onions! But I bet it does give great flavor.

Instead of separating the yolk from the white you can just use a cheese graterand grate the egg. It makes the sandwich so much smoother and takes a LOT less time.
I used a fork until I had a egg salad craving today of all days. I was too lazy to clean a single utensil and in a complete madness used my pastry cutter to mash the eggs. It worked remarkably well and I’m never turning back.
One time my sister saw me doing this so she bought me an egg slicer as a throwaway gift. I said thanks...and continued to use a fork. It's super easy and then I use it to eat the egg salad or use it to make the sandwich with the egg salad.
If somebody would have asked me before this thread, I would have said that they were a fool for doing anything other than the rotating-egg slicer method.
I feel honored my Mom's odd cooking habits have made such an impact. She was an amazing cook and has been gone for 11 years so if you are being serious that means a lot to me that her spirit carries on in egg salad sandwiches (okay that sounds sarcastic but I'm being totally honest 🤣)

Go grab a wire cookie cooling rack with the smallest holes you can find. Peel the eggs and then press them through the square holes with your hands over a bowl.
It's fun, easy, and all the pieces stay similar in size for a nice bite and chew. Also easy to cleanup.
I don’t love hard boiled eggs but I always think egg salad sandwiches seem like a good idea, and I never heard of a recipe like yours where the white is the solid part. It sounds worth trying to me prob this weekend and again I don’t even like hard boiled eggs lol. Boyfriend will eat it if I don’t like it
Years ago a coworker brought egg salad to work to share that was amazing. It was fluffy and had a great taste to it. When I asked them how to make their egg salad, they mentioned adding some garlic powder and a fork to mash the eggs, that was the main change in their recipe.

Take a few medium-boiled eggs. Yolk still custardy, almost runny.
Chop them into quarters.
Add them on top of the sandwich, with the yolk side facing up. Then add the basil.
I'll counter with my "Not 'the best' but a perfectly adequate and *really* quick & lazy egg salad recipe: Hard boiled eggs, chopped/smashed, then mixed together with Ranch dressing.

My preferences only: no to the garlic for me but yes to the onion. a teaspoon or two of dijon mustard. also add an equal amount of finely minced celery, a few chopped cornichons, and minced Italian parsley instead of basil.
Mayo, mustard, and pickle relish are my minimum ingredients for egg salad, tuna salad, chicken salad, potato salad, etc. Thinly sliced celery, onion, green onion, fresh ground pepper, and fresh herbs step it up a notch for flavor and their crunchy contrast.
Best egg salad sandwich I got was from a deli. It was pretty standard, had a very small amount of sweet relish and enough mustard to add zing but not overpower it. What really set it apart was that they served it between layers of shredded iceberg. Not thick layers of iceberg, just enough for some texture.
Side note, white bread is the best for egg salad. It is soft enough that you can bite right through it and not have the salad squeeze out the other side.
I do something similar but use scallions instead of onions, and add an avocado to the egg yolk paste. Then instead of basil i top it with chili garlic crisp.
If you soft boil your eggs so the yolk is slightly jammy you can use less mayo for a slightly healthier version. I’d also replace the basil with pickled jalapeño relish but that’s just me
Ever since learning about the kpop egg sandwich with strawberry jam in it I always add a thin spread of strawberry jam to my egg salad sandwiches. It's genuinely so good LOL though I don't think it would pair very well with this specific egg salad, this is definitely a more savory one. Sundried tomatoes would go really well with this, also I bet if you caramelized the red onion it would be great too!

Only one I like to keep basic is coleslaw, it's just so good in its most basic form.

a little dashi powder, kewpie mayo, a mild mustard, sugar, salt pepper.
egg yolk mixed to absolute mush and egg whites rough chop.
texture was really nice, firm whites and mushy creamy yolk.
toast on the lightest toast setting.
optional chili/cayenne powder.

So Saturday, I went out and got, like, a dozen eggs and then I boiled them all and I just, I spent, I dunno, probably three hours, like three and a half hours making, you know, the mayonnaise, and the onions and paprika and, you know, the necessary accoutrement. Dice a pickle. Not relish. A diced pickle. There is a massive difference in texture.
This is pretty close to how I make it except I add some Dijon which punches it up a bit with some zing.
I use dijon in my homemade mayo, so I always get the zing

Hell yeah! Egg salad sandwiches are so underrated. I have mine with pickled banana pepper rings and diced red onion.
I filed for an LLC for the chopped egg whites and I'm happy they'll get the proper tax treatment but I don't see why that step is necessary
I wish I had the vocabulary to describe how different the chew is when the whites are left in larger chunks.

I need some finely crushed dried parsley in there. Not fresh but dried and finely crushed. It provides a base flavor that other stuff can play off of.

2 cloves of garlic to 3 egg seems a wild ratio to me. Love the stuff but would tone down for a lunch option especially if at work etc. Sure its delish tho!
I'm taking a bit the japanese egg salad sandwich approach and add some soft boiled eggs to it. makes it that much creamier and less mayo needed

ah i wish i had the recipe written down somewhere. It was a random japanese youtube video with subtitles. from what I can remember 3 hardboiled eggs and 2 soft boiled. egg white & yolk separate a little dashi powder, kewpie mayo, a mild mustard, sugar, salt pepper. egg yolk mixed to absolute mush and egg whites rough chop. texture was really nice, firm whites and mushy creamy yolk. toast on the lightest toast setting. optional chili/cayenne powder. i believe that kinda was the recipe, don't quote me on that though. lol I'll try yours egg sandwich too
I really enjoyed the complexity of the soft boiled egg sandwich. I have a hard enough time making a poached egg. It never sets up pretty.

I used 3 tablespoons. Use as much or as little as you like. The ingredient measurement is very flexible.
Oh man, Friday, I really wanted an egg salad sandwich and I was just obsessing about it and I was like, 'Man, I'm gonna make one of those.' So Saturday, I went out and got, like, a dozen eggs and then I boiled them all and I just, I spent, I dunno, probably three hours, like three and a half hours making, you know, the mayonnaise, and the onions and paprika and, you know, the necessary accoutrement. And then, by the time I was done, I didn't really feel like like eating it.
I love garlic, but not in egg salad. I will try the basil though.
