Used a Masonite sheet in a previous vehicle. Thin, Light Weight, Strong, Durable and you don't get caught up on carpet so you can slide things around easier.
They are kind of annoying when used with the cargo area mat. The cargo mat tucks under the wheel well covers, so if you need to access the spare tire storage area, the wheel well covers fight the cargo cover as you try to lift it up.

For $20 or less my "must buy" is always one of the overhead car ceiling cargo nets (with zipper - which is key so stuff doesn't fly out during a hard stop, or forbid, an accident).
I store so much stuff in there, that way if any prying eyes look in the center console: it's empty.
A side note: only fairly light things go up there: spare glasses in a case, a microfiber, small leash, water bowl, dog poo bags, sealed plastic utensils (like the packs you get with fork/knife/spoon/napkin/salt and pepper), masks (during the height of COVID).
Literally so much stuff though. Best accessory for $20 or less that I buy.

Literally just take out the incandescent read dome and trunk lights, buy the equivalents and replace. They’re a generic bulb type you can find at autozone
I replaced the puddle lights under the door and the reverse lights with LEDs from Diode Dynamics. Also got the cargo side protectors, seat back, and rear door sill protectors. I know it's a Wilderness vehicle, but still like my baby protected. Infotainment protector and shifter protector from ScreenProTech got here yesterday, but have not applied yet.
Next on the list is probably a cover for the top mount intercooler. The one on my WRX was all bent from road debris getting in there. Been considering the strut tower brace. Also saw an older post saying the sway bar upgrade kit made the handling better.
Trying to not go too crazy right out of the gate since I'm still a couple of weeks into ownership. Sadly, eyeing new tires and wheels as well.
Window/sunroof deflectors, trailer hitch, sun shades for rear windows, driver and passenger window tint to match rear windows, rear seat cover for the dog, cargo cage divider, and fire extinguisher.
The higher end outbacks should come w/ a factory installed trailer hitch. It’s a bit of a disappointment. I’m sure they did focus groups where the majority of owners wouldn’t use one, but for over 40K on a utilitarian vehicle, this thing should come with a hitch option.
I don't believe even a Bronco or Wrangler come standard with a trailer hitch, additionally there are some negative of having a trailer hitch if you are in a rear end collision. Not a deal breaker for me, but something I would be thinking about if I was regularly hauling children.
Arm rest space divider. Don't know how big the newer arm rests are but the 5th Gen has a fairly cavernous space. I can now find things I put in there - like charging cables, eyeglasses, flashlight, etc.
Wilderness is the only trim that does not come with them. The fold in ones on other trims don't support a ton of weight(176Lbs I think) and the wilderness has beefier racks sides and can take beefier crossbars.
Very sure. I found this out after the purchase. Not a deal breaker since I still have the car but for the Wilderness, no crossbars. Reason is that the weight for the fold out is far less than the Thule ones offered by Subaru as an add-on. They figure if you are buying a Wilderness, you want to put a tent on the roof and that is heavier so it requires more strength.
Immediate must haves for me.
Thule aero bars (unlike you I actually like the sticking out look). TuxMat because the stock floor mats have terrible coverage. The wheel well covers were included at purchase.
As soon as I get around to it: Auto stop/start eliminator because the car always cuts out when I don't want it to and it's just one more button to press every time I start the car. After market shift knob, probably the Perrin option as I can't stand the OBW stock knob with the gold plastic with rough edges. I might get their strut brace too, to see if that stiffens things up a slight bit. Probably getting a CompressiveTuning AirShield.. I'm at 8k miles and the intercooler fins are already looking a bit beatup so I think I want to protect them better. Going to get something to protect the infotainment screen and plastic around the shifter. Need to get some tinted stickers to put over brighter light areas (passenger airbag light is a big one I want to minimize but not cover entirely).
I might have to occasionally carry something heavy in the back and I don't trust the foam and spare tire to take that weight so going to add a sheet of plywood and carpet at some point (as mentioned in another comment here).
Long term if I keep the car past 50k miles, I'm swapping out the seat covers for actual leather.. the Startex gets too hot for my taste and I don't like the feel. But that's a low priority. I might try to salvage some leather seats with ventilation from a scrap yard out of a touring model at some point.

I always lay my arm on this and I don’t want to get it stained by sweat in the summer. I have a 2020 premium, not an OBW.
Heated seats, SXM radio, trailer hitch, body side moulding (that sheet metal is *thin*), wheel arch trim for pre-plastic cladding models, Diode Dynamics fogs, snow tires on designated rims for the winter (we get 150-300” of snow where I live), and propriety GPS system (we have massive cellular blackout zones here).
One thing I forgot - this is an essential :
A carabiner .. I have read that if you want to keep your hatch open all you need to do is use it in the trunk latch, it will make your car go to sleep and not drain your battery. That is as long as you have all of the interior lights off as well.

They fixed the drain issue in 2021 models and newer. The power liftgate goes to sleep after twenty minutes of being open. But, opening and closing any doors resets the 20 minute timer.
You do need to put your fob in sleep mode if you intend to keep the fob near the vehicle for extended periods of time. The proximity sensor in the fob will keep the car “awake”.
The protector for the backs of the rear seats and for the cargo area.
That was a must when I got the car. Even got the extra covers for the rear wheel humps.

Totally worth it if you are utilizing the back to haul things. Its really a piece of mind that you aren't going to damage the carpet lining.

Sadly, yes, however all the crossbars I've found stick out on either side screaming aftermarket and kinda ruining the look of the vehicle.

The newer ones are LED already(23+ I think). The LED upgrade option you see marketed is just for the visor("make-up" lights).
