Most non chains north of you. Casa de nena, no manches way (birria), Rosas (chiles), handful of places downtown Ogden, Tacoland (pastor), damn near everywhere in Logan
I think the same can be said for almost any ethnic food restaurants in Utah. I've only found one decent Chinese place since moving here. I mean where I moved from every small town had it's own (insert ethnic food restaurant), and they were all delicious. I think it just shows the lack of ethnic diversity in Utah. Seeing that change slowly, so hopefully good food follows!

Casa de Nena is legit. It's in a strange spot, but worth the search.
Seconding Rosa’s. The enchilada special on Wednesdays (I think) is fantastic.
The more low-rent the place looks, the better it will be

Las Brasas in Provo.
Weber county no idea. But in SLC you have places like El Rey de Los Oros, El Paisa, tacos Los Lee, or la casa del tamal
El Paraiso in Ogden is so overlooked.
The Spanglish in Layton
El Mexsal in Provo. Hands down. Chunga’s is pretty good. I usually go to the one off the 201. They are a bit on the Americanized side though.
El Cabrito in Rose Park.
Asado Argentinian Grill in Orem is pretty good.
La Cocina in Salt Lake Fort Union area. Food is great

Angelica’s in St George on the way to Zion. Some of the best carnitas I’ve had *anywhere*.
Carnitas is good. The rest of the meats are trash.
