Paleblood is not literal blood. The old blood/beast blood/healing blood is the funky blood they found in the chalice dungeons, which formed a bunch of religions. Paleblood is what your character went to Yharnam in search of, without knowing exactly what it was. The guy in the window (Gilbert) also has no idea what paleblood is, but assumes it's literal blood & tells you to head to the cathedral ward, which was not actually the place to go for paleblood "The nameless moon presence, beckoned by Laurence and his associates. It's what unintentionally sought out to "transcend the hunt", which is your character's goal from the start. Miyazaki himself said that was an intended interpretation, in his interview from the collector's edition guide, as a response to the interviewer asking if it was meant to be the blood of great ones. This seems to very much suggest it is not the blood of great ones, it is the great ones themselves, or one specific great one Another interpretation highlighted in that part of the interview is that paleblood is the colour of the sky over yahar'gul, after the blood moon is revealed, since the "pale blue" colour could look like a corpse drained of blood (it's pretty bright to me idk). This is the purpose of the "behold! A paleblood sky!" note. That idea, combined with the idea that the moon presence is also paleblood itself, gives the idea that paleblood is just truth itself. Understanding & overcoming the eldritch truth is how you ascend. The paleblood sky is the true sky, since the blood moon was already there, Rom was just shielding the world from the eldritch truth to prevent even more mass insanity

To make it more clear we should keep in mind the Japanese version of "Paleblood" which is "Paled of blood", meaning the aspect of someone who has lost lots of blood. The Moon Presence appears when the Red Moon which hangs low gets drained of blood. Moon Presence is the white moon. That's also why we find a note saying "Look! A paleblood sky!" (A sky paled of blood) which represents the moment at sunset when the moon can shine and after the illusion of Rom has been broken.
