Once I got the atomizers from Mothership Z, I went and got Fawkes again and we just went from town to town cleaning up. I load as much gear as I can on him and me and fast travel back to one of the trading posts. So I’m pretty capped generally (15k+).

Yes! Talk to him and when he asks what’s up there’s an option for “I want you to carry something for me” or something like that. And he can carry a bunch. Just load him up till it says he has too much.
It isn't even bad. None of the DLCs are. I don't know why people complain about them, not only is it quite fun, adds a new system (the squad system, the only way to officially have multiple companions and also give them orders) but the reward for completing it is very good, especially if you do it as soon as you leave the vault. I'm not gonna spoil it just in case OP sees this, but it is a fun DLC.
Anchorage is super linear, you could mistake it for a COD campaign clone. The run and gun aspect got old real fast, especially when they reverted to Wolfenstein level design (ammo and health refill stations). Nicest thing was the ability to get power armor training earlier in-game or the stealth suit.
I only found the DLC remotely enjoyable if I played it via TTW.
Well, I recently did the same thing, first time doing a full playthrough since before 4 came out as I've realized, and I ended up deciding to keep playing that character in a new vegas playthrough.
Definitely recommend you do the following: T51-B armor quest, collect every unique weapon and armor you can, collect all miniatures items (gnome, alcohol, nuka drinks), defeat all behemoths, bobbleheads, all skill books and drugs (ultra jet) or if collection isnt your thing, kill everything, and leave no one but the children.
I use mods. *Loads* of mods. To be exact, I play FO3 in the context of the Tale of Two Wastelands mod for Fallout New Vegas, along with two other mods: Functional Post-Game Ending and Claim The Mojave (And The Capitol) along with Radiant Infinium.
This combination of mods means that any one playthrough is functionally unlimited. After both main quest lines conclude, you can keep right on playing, rebuilding both wastelands by grinding for caps with Radiant Infinium, then investing them. There are also Caravan Guard mods that function similarly and fulfill the same revenue generation purpose.
Hunt all the Super Mutant Behemoths, which I think is 5 of them and collect all 20 Bobbleheads
If you haven’t already, look for all of the bobbleheads and unique weapons.

If you start selling enclave's power armors and plasma rifles you'll get rich in no time. One single plasma rifle is like 1200 caps
Replay in a different way and try to look for hidden secrets, speedrun it, or mods, lots of mods.
Play Skyrim. Or New Vegas. Or FO4. Or Oblivion.

Good advice actually. Play the DLCs of 3, then play FNV and it's DLCs. It'll be great. It's what I did as well.
Go ahead and play Anchorage first so you can get the worst DLC of both games out of the way.

There’s a glitch where enslaving raiders and enclave makes them respawn non-hostile, I used to attempt to tame the wasteland.
Explore and discover every location. There are a bunch of unmarked quests out there too.

Pretty much anytime I finish a Fallout game I'll either play something else for a bit or start a new run with a different build

One thing about Fallout 3 that I loved is that I kept finding all sorts of cool encounters and locations long after I “completed” the game.
