Totally meant browning, I also suggest doing the same recipe with pork, then getting a good hogie bun, some provolone, and taking some shredded pork, crisping it up, browning an onion and making a hogie sandwich next level.
Try adding caramelized onions in place of the onion soup mix and removing the stems from the pepperoncini. I did that last night, and then chopped the pepper onion mix at the end and added it to the meat. Best one so far!

I will suggest this, you can use 8 oz beef broth instead of the butter. The roasts I buy always have enough fat, I feared adding more fat to the dish.

I have tried this before and it turns out great, I'm sure yours will too. My next experiment is to try it with chicken thighs possibly.
I’ve never used beef and have only used chicken thighs. It’s a hit in my house. I probably make it twice a month. I say go for it!

My guess? A beef broth of some sort. I use a pack or two of lipton onion mushroom soup mix in mine.
It was a packet of au jus seasoning as per the recipe!
