Sorry for the late reply to this, BZ does have a multiplayer mod that’s actively being worked on and 90% done. Just finished a bug-free play through of it with a friend!
SN nitrox multi we played as well but after we reached the lost river it bugged so hard we was unable to continoue. Also later we tried again and it not worked the latest SN version...
A link would be usefull for the SN BZ multiplayer mod that works, because what I found it has nice website and that's all. No video to prove it or anything else...
And what videos I found was like a very early dev version where green markings shows where are the resources.

It’s currently in alpha so you can pay a one time fee of £4.50/$5 that gets you acccess now for you and a friend, or wait till beta release which I think is this year but will be free for all!
I understand the lack of video thing but I asked in the discord and they all said it’s fine, so paid and played it. 0 issues. Obviously the unsycned stuff is unsycned but no vehicle or story issues. You can’t even progress the story unless all players are at the checkpoint together, it’s neat.
So if I understand correctly: I have to pay 5$ for a third party alpha stage mod that not syncing everything, and it has some early stage video proof it working.
I understand they want some money as they stated:

But they state as well after the Beta stage there will be no fee. So after it reaches the Beta there will be suddenly no more server and domain fee...strange. There are other modsites that has no this cost if I read that well.
I am gladly pay for a fully working multiplayer mod that has the blessing of the SNBZ devs. But this is not that if I understand correctly.

I’d suggest checking out the discord if you want reassurance, there’s moderators in there that are present and active in the Nitrox server.
Raft has peaceful mode, which means that enemies don't attack you. You can still start a fight if you want the resources from one of the killable animals.
I'm not sure how much the story suffers in peaceful mode. I never finished, because I got bored of some of the island exploring. (There are random islands which can be explored pretty quickly, and a handful of unique locations with more in-depth exploring. I wasn't a fan of the unique locations, but it's the only way to get certain blueprints)
You can change modes, but only if you download a hex editor to adjust the file. You could open a creative game, give yourself some basic supplies if you want, and then move to peaceful or survival.
idk if I'd include Valheim, the entire point of the game is killing mobs and bosses. I mean sure I guess the player that doesn't like fighting can just do the base building but that's not great. Especially when you can't even progress past the stone age without killing the first boss unless you do the tedious and very dangerous "bait the troll into breaking this deposit for me" tactic
Astroneer has been fun for me and the wife, it's got a lot of the same energy as Planet Crafter. Dig around on alien planets, construct bases, build vehicles, dance with cute little slug friends. The only 'enemies' we've come across are basically the local equivalent for cacti, as in plants that hurt you of your wander too close.
There's a game called Palia which is currently in beta, but it's free to play. It's described as a "cozy mmo". There's no combat, you each have your own housing plot to build on with your friends and can grant them permission to farm/ base build/ cook, then you can enter the same servers in the open mmo world to explore/ farm resources together etc.
It's not exactly planet crafter style but it's multiplayer, chill, open world and easy for a beginner to pick up. And its free so nothing to lose by trying it.
Valheim is probably one of the best options. You can set mobs to passive (won't attack you unless you attack them first) and turn off raids (groups of enemies come to the base and attack it) but bosses still have to be fought to progress. Everyone does *not* have to participate in that. It's just harder to kill them with less people, but it can be done, people play solo all the time.
Subnautica, if your base is in a safe area, only the people going out exploring might have to fight nasties.
I personally love Raft, there is a shark that occasionally attacks the raft as it's sailing and you have to smack it a few times to get it to go away, and there are a lot of enemies at the destinations, but there's no penalty for staying on the Raft to decorate/produce items while others explore because everybody gets access to any story-driven components regardless of if they're on the island or the raft.
Foundry is a great game that I've recently started playing. Minecraft meets Satisfactory with no enemies whatsoever. Definitely checks all of your boxes.
I got a lot of déjà vu when playing with Subnautica. There's no official multiplayer so it would have to be via mods. There are enemies, but I spent most of my time avoiding them or stunning them. You could definitely play without killing, but you would need to evade or temporarily disable enemies.

Even with aliens enabled you don't necessarily have to fight. You can just build defenses around your base to keep them out. And there are many weapons that do all the heavy lifting for you, so you don't need any PvE experience.
Subnautica is a fantastic survival Crafting game.
It has the same exploration, progression crafting, and base building.
There are things that might kill you but you don't kill things. That's not the point of the game
There is a sequel called Subnautica below zero. It is good but I think most people will say the original is best. It is just very pretty scenery and 90% of the world. Immersive it is absolutely immersive. The sites the sounds everything.
Having no enemies is going to be a hard one... Sicne Planet Crafter is pretty much the only game I can think of like this (survival/crafting) that has 0 enemies.
But most survival games have very easy enemies... they are there mostly to just scare you, not really kill you.
I would recommend
1. Subnautica (this game basically copies Subnautica directly)
2. No Mans Sky
Both are 10/10 super chill survival/crafting games with WAY more gameplay than Planet Crafter (and far more refined).
I'm not sure about PC not having any enemies. I've been stuck outside in a super alloy meteor shower.....
A zigzag pattern while running away from Ramsy Bolton (?) Shooting single arrows at you would be advisable. It wouldn't help in a SA meteor shower.
I just got this game recently too and I fell in love with the style so I tried a few of the other popular options given here. Here is my take on Subnautica and Satisfactory
Subnautica is pretty much the same but it’s all under water and resources aren’t as abundant as PC (Plant Crafter). This game does have some enemies and bots that can hurt you but it’s pretty minimal and if you avoid the areas they patrol or even just zoom through it you should be OK. One last note for this game is it is normally single player but there is a mod to enable multiplayer
Satisfactory is the game I got hooked on the most. The resources are deposits in the ground that you build miners on and mover the material in conveyor belts. There are more enemy aliens in this game for sure, but I like the combat in their game over subnautica. Again combat is pretty easy to avoid. And if you do get into fights the aliens are easy to dodge and hit when they miss.
So yeah I think you should try Satisfactory next

You can have hunters on or off. You can have easy mode to hard mode.
I've been playing this game since just before COVID and have roughly 1200 hours on it and I still love it.
I know you said no enemies, I tend to like no enemies too but the game Stranded: alien dawn is amazing. Reminds me a little bit of the sims except in space, with aliens that want to steal your harvests. You can adjust the difficulty of enemies and it really is an awesome game with huge replayability and different objectives.
Medieval Dynasty is extremely similar in gameplay style, just in a medieval setting. By default it does have hostile bandits though, but you can disable them in the settings. There are also some hostile animals, but they are pathetically easy to deal with. And they will remain marked on the map as soon as you find them, making them super easy to avoid. You can also essentially delete their spawn point by building something near it. Dunno if they or their hostility can be disabled too.
Forever skies.... Think raft but in the air. Base building, exploration, crafting. There's a few mobs you can fight but you can also mostly avoid them.
Astroneer, stationeer, satisfactory, techtonica, astro colony, junkpunk
Wildmender has fights but not that hard and has similar goal: change the environment from a desolace place
no man's sky, raft, scrap mechanic, volcanoids, generation zero, sunkenland, valheim: has enemies and need fight there
subnautica and subnautica BZ, dyson sphere program, forever skies: has no official coop playmode
it takes two - no base building, but a coop only, 12-15 hour game experience that must have play through at least once.
I played the demo. This looks really promising. A competent early demo of a mashup between The Planet Crafter and Satisfactory. Kind of like a version of Satisfactory with terraforming. Thanks for the heads up on this one.
I discovered PC after playing Subnautica and Below Zero. I am currently playing Satisfactory.
sadly SN has only third party multiplayer mode that not really works with the up to date version, and BZ has no multiplayer option.

I enjoyed Astroneer. Quite a chilled game. No mobs as such although there are some hazards. Has base building and multi planets too.

I would say this answer is actually tied with astroneer. Satisfactory has similar vibes, but astroneer is quite a bit more similar imo.

Techtonica i think meets all of the above, is more factory and less terraforming but it does matches all your requirements

I’d check out Dinkum. It’s among the coziest of games. There are enemies (animals) but you pretty easily avoid them.

Try Desynced. There are enemies but you can set them to passive. Dyson Sphere Program has a mod for multiplayer as well.

I’m going to say Osiris: New Dawn. Has received some great updates lately.

Empyrion Galactic and Space Engineers are a bit more technical in execution but are similar.

Space engineers is rather peaceful if you like building bases and ships with resource gathering.
