It's not about the restaurant honouring their word on it being all you can eat. It's about there's more fucking people in the restaurant who would like some of that and they paid for it just as she did. Just take some, put it on your plate and eat it. If you want more later, go to the buffet again and they'd have made a new batch and you take a few more. Keep doing that until you're full like everyone else at the restaurant and don't act like you're the only one here. Taking the entire plate is ruining the experience for all the other customers, that's a major asshole move.
And what if those other 2 customers would have liked a piece from that particular plate? It doesn't really matter how many other people there are, it's still a dick move. And obviously the restaurant has to follow a consistent policy about this sort of thing regardless of the amount of customers. It's either always acceptable to take the entire plate, or it never is (spoiler alert: it never is).
Places should force the patron to eat the entire tray or they have to pay double for they meal, if they fail to eat it all or fail to pay they are permanently banned

When I was a kid I really really liked pickles, especially the buffet pickles. So one day I went up and got like an entire fucking plate with a gigabtic pile of pickles. I went back to the table and my dad blew a fucking fuse and made me eat the whole plate(which was my plan in the first place).
The issue to him wasn't that I wanted to eat that many pickles, but that I got a whole plate full like an animal. If I had gone back and gotten a few pickles multiple times it's not a problem, but to grab all of them is greedy and rude.

Here in the Netherlands most places will charge you per piece you have left over at the end of your dinner. Clearly the rule was instated because of douchebags like this.
That is why any decent sushi restaurant has a process of freezing the fish at 20 degrees below Celsius for 7 days so that it kills the parasites, plus the fish are inspected over a light and they try to remove anything visible when they cut the sashimi.
Sounds like you are not very aware of sushi preparation practices. Maybe Google it, you will see enjoying sushi from time to time is safer than eating your factory farmed pork hotdogs 🌭
