Both are accurate, although opposites. Tremors are small whereas convulsions are seizure level. I’ve experienced similar to both but it’s unlikely I have two separate conditions! The conditions listed in my second edit include both of these, so I believe those are more of what I’m looking for. Thank you, though!

I don't know if anything can top "seizure" or "tic," but maybe **"spasm"** could be it.

My daughter does this in the cold. Choreathetosis and sensory integration disorder. But it also sounds a little bit like turrets syndrome.
